Pepper pot.

A friend and I once took a Caribbean cooking class through the Vancouver School Board’s Continuing Education program. I had taken other classes through the same program and they were all taught by professional chefs and I learned some fabulous things, including recipes I still use on a regular basis, so I thought the Caribbean class would be equally useful.

When we got to the first class, the instructor was wearing a lot of red lipstick, some of it on her lips, and a T-shirt printed with a picture of her face. She was no longer allowed to sell her herbs and spices in class – the school board forbade it – so if you wanted to come out to her car after class, she’d sell you spices in Zip-Loc bags. I can imagine how it would look, buying a baggy of dried thyme from the trunk of someone’s car in a south Vancouver high school parking lot, but I guess that’s how she supplemented her income; she would mention her spices two to three times, every time.

She also ran a catering company and would deliver your Christmas turkey or Hanukkah feast, and taught she taught basic cookery to children (I was once handed a recipe for a spaghetti dessert involving raisins, cottage cheese, and cinnamon – I think it was supposed to be Noodle Kugel, but it missed the mark … a bit). The course was four classes long and basically one giant commercial. And the food was terrible.

What I did get out of the class, aside from a Certificate of Attendance and a desire for my own face on a T-shirt, was an introduction to some of the basic flavour combinations that comprise Caribbean cooking. What follows is a version of Caribbean Pepper Pot, which I was introduced to in that class, but which has evolved into something less complicated but infinitely more complex.

It is mildly sweet, as spicy as you want it, and full of autumn veggies, which makes it a cozy dinner that’s lovely this time of year. I hope you’ll try it. And no need to follow me out to my car afterward.

Pepper pot

(Serves six to eight)

  • 2 tbsp. vegetable oil
  • 8 chicken thighs, bone in, skin removed
  • 1 medium onion, halved lengthwise and sliced
  • 3 cloves garlic, chopped
  • 2 tbsp. dark brown sugar
  • 1 1/2 tsp. dried thyme
  • 1 tsp. ground allspice
  • 1/4 tsp. ground cinnamon
  • 2 bay leaves
  • 1 1/2 lbs. yams or sweet potatoes, peeled and chopped into one-inch pieces
  • 2 cups diced fresh tomatoes
  • 1 to 2 scotch bonnet or habañero peppers, pierced (unless you like it really hot, then chop the peppers finely … but be careful)
  • 2 cups chicken stock
  • 1 14 oz. can coconut milk
  • 1 lime, zest and juice
  • 1/2 lb. okra, chopped into one-inch pieces
  • 1 red bell pepper, chopped
  • 1 cup chopped kale, packed
  • 1/2 cup chopped fresh cilantro
  • Salt and pepper, to taste

Heat the oil in a Dutch oven or other large, heavy-bottomed pan over medium-high heat. Add chicken thighs and brown each side. Remove from pan and set aside.

Add onions and garlic to the pan, scraping up any chicken bits from the bottom. Add bay leaves, brown sugar, thyme, allspice, and cinnamon. Cook until fragrant.

Add tomatoes, sweet potatoes or yams, scotch bonnet or habañero pepper(s), chicken stock, coconut milk, and lime zest and juice. Bring to a gentle boil, then reduce heat to medium, and simmer for 30 minutes.

Add okra, red pepper, and kale and simmer for an additional 10 to 15 minutes, until okra is soft. Stir in cilantro. Taste, adjusting seasonings as needed. Remove pepper and bay leaves. Serve with rice.

Sriracha buffalo wings.

I don’t really get chicken wings.

Like, I get that they are a vehicle for sauce and dip and that sauce and dip are two of humanity’s greatest triumphs, but as a vehicle they are clunky and difficult. There are too many parts of the chicken wing that are not meat, and you have to work for what you get, and you don’t get much. You have to keep eating chicken wings forever if you expect them to make a meaningful meal.

And anyway, if I am going to get my hands dirty, it’s got to be for something really worthwhile, like crab legs or brownies.

But Nick really likes them, and doesn’t even seem to care that they are messy and complicated. And since we always eat what I feel like eating sometimes it’s not a bad idea to throw him a bone. These wings are fried and then doused in sriracha and then baked, and I served them with a chilled dip of sour cream, lime juice, salt, pepper, and cilantro. For the longest time Nick ate in silence, not even pausing to swear at the Canucks or complain that he had to get his own beer. These are good wings – the first period has ended and he still hasn’t spoken a word.

Sriracha buffalo wings

  • 2 cups peanut oil
  • 2 lbs. chicken wings, tips removed
  • 1/2 cup flour
  • 4 tbsp. sriracha
  • 2 tbsp. butter, melted
  • 1 tbsp. lime juice
  • 1 tsp. salt
  • 1 tsp. pepper
  • Chopped scallion, for garnish

In a large pan over medium-high heat, heat oil for three minutes.

Preheat oven to 350°F.

Place chicken into a plastic bag with flour, and shake until wings are covered – you may need to do this in two batches. Place half the wings gently into the pan, and cook eight to 10 minutes, until golden. Remove to a plate lined with paper towels, and repeat with the second set of wings.

Meanwhile, in a large bowl, combine sriracha, butter, lime juice, salt, and pepper. Add fried wings and toss to coat.

Place on a baking sheet fitted with a wire rack. Bake for 25 minutes.

Serve hot and sprinkled with chopped scallions.

Meatless hot and sour soup.

In the aftermath of yesterday’s chaos, Nick spent today on the couch, fielding phone calls from everyone in the world and suggesting today was the day I take charge of his correspondence. No luck with that, so every 30 minutes he’s telling the same story. The cat seems to sense something is wrong, and has been his constant companion. I am helping by drinking all the wine.

We still had yesterday’s groceries in bags as I’d just shoved them into the fridge before running out to the ER, and since my only outing all day was  to get Nick’s prescription, I figured we might as well do Meatless Monday over.

We’ve been battling colds (it’s starting to feel like like we’ve always been battling colds), so soup was what we wanted yesterday, specifically hot and sour soup, and to be able to eat within fifteen minutes of arriving home after a long day. I picked up some fat white mushrooms and some crisp-looking bok choy, and couldn’t wait to eat.

You could use cabbage, if that’s what you’ve got, or any leafy green thing you have on hand. The point here is ease while still making a dinner that’s somewhat interesting. This is a short-cut version of the kind of hot and sour soup I’d have delivered if it didn’t take so little time to make, a soup that captures the gist of what I’m after when I’m after salt and spice and tang, and it makes enough for four to six people. This is the basic recipe, but if you like it hotter, or sourer, or if you prefer a bit of lemongrass, or chicken or pork instead of tofu, there’s room for creativity and adaptation.

Meatless hot and sour soup

  • 1 tbsp. sesame oil
  • 1 tbsp. minced fresh garlic (heaping)
  • 1 tbsp. minced fresh ginger (heaping)
  • 1/2 cup soy sauce
  • 1/3 cup rice vinegar
  • 2 to 3 tbsp. sriracha, or to taste
  • 2 tsp. honey
  • 8 cups vegetable stock
  • 1 block tofu, cubed
  • 3 cups thinly sliced bok choy
  • 2 cups sliced mushrooms
  • Salt and pepper to taste
  • 1 egg, beaten
  • Bean sprouts and chopped scallions and cilantro for garnish

In a large, heavy-bottomed pot over medium-high heat, cook garlic and ginger in sesame oil until fragrant. Add soy sauce, vinegar, sriracha, and honey, and stir to combine. Let simmer one to two minutes, until reduced by a third. Add stock.

Bring to a boil, then reduce heat slightly so that liquid comes to a simmer. Add tofu, bok choy, and mushrooms, and let cook three to five minutes, until bok choy has wilted. Taste, adjusting seasonings as needed. I used homemade stock, so I had to add a little bit of salt. If you’re fighting sniffles, a little more hot sauce might be a good idea.

Stirring the liquid in the pot, pour the egg in a steady stream, swirling the liquid so that the egg forms many strands. If you don’t keep the liquid moving, the egg will form an unappetizing-looking glob.

Serve immediately, garnished with bean sprouts, scallions, and cilantro as desired. I bring out the bottle of sesame oil and the sriracha as well.

Feuerzangenbowle!

A few weeks ago my mom and I went on our annual holiday outing to Christmas shop and eat and generally be merry, and we went to the Vancouver Winter Market beside the Queen Elizabeth Theatre downtown because the ad said there would be food and festivity and because this was the first time we’d ever heard of the thing.

When we got there, the first thing we saw was a kiosk dispensing something German we couldn’t pronounce, but it smelled good so we put a deposit on a pair of mugs and had our first round. Feuerzangenbowle, the thing we got, is mulled wine with cinnamon, cloves, star anise, orange, and rum, and when I did a bit of research I discovered that it’s also something that involves fire, which stirred my mild pyromaniacal urges in the best possible way.

The most important thing about feuerzangenbowle is zuckerhut, a sugar cone which is doused repeatedly in rum and set on fire above the heated wine mixture. The sugar caramelizes and melts into the wine, and the result is magic. I wanted to create this on Christmas, so I asked Brigitte, a German lady I work with, how to spell the thing I wanted to make (I still can’t, and pulled the name from the email she sent me, which also included this recipe for “rumtopf,” which I also must make) and where to buy the zuckerhut. I ended up not being able to find it in town, but she would be going to Greco’s Specialty Foods in Surrey and she had called and found that they had some, and she would pick one up for me. And she did.

To find zuckerhut, visit your local German deli; if they don’t have it, they may be able to order some in for you.

And so, on Christmas Day, we poured two bottles of cheap, off-dry red wine into a Crock Pot, and set it to heat for an hour. We added strips of orange and lemon peel, and two cinnamon sticks and two cloves to the pot and let it simmer with the lid on; next time, we’ll add two star anise pods and slice the orange and lemon into the pot so that the fruit flavour is more pronounced. Our adapted recipe comes from this one from WikiBooks, but deviates significantly enough that I’m okay calling the recipe below an original interpretation – we wanted it to taste like the drink we had at the Winter Market, and I think we made it work.

After an hour, we placed the zuckerhut in a wire mesh strainer and held it over the pot. We poured rum over top, and then lit the cone on fire. It was awesome. We ended up using about a cup and a half of rum; the cheap white stuff worked better than the good amber stuff for burning. When there was no more rum and we couldn’t light the sugar on fire anymore, we stirred the remains of the cone into the pot and let it dissolve. We served it in mugs immediately, and felt very warm and delighted and then had naps.

Feuerzangenbowle

(Serves six.)

  • 2 bottles of off-dry red wine
  • 2 cinnamon sticks
  • 2 whole cloves
  • 2 whole star anise
  • 1 orange, sliced
  • 1 lemon, sliced
  • 1 zuckerhut
  • 1 1/2 cups rum

Heat wine with cinnamon sticks, cloves, star anise, orange, and lemon slowly. If using a Crock Pot, set on high heat and let sit for about an hour. Do not bring to a boil. If heating on the stove, heat over medium-low heat, covered, for 30 to 40 minutes.

Suspend zuckerhut in a wire mesh strainer (one that has no plastic on the edges of the strainer). Pour two tablespoons of rum over top, ignite, and continue feeding the flame with small amounts of rum until no rum remains. Do not pour rum directly from the bottle.

Stir any remaining sugar from the zuckerhut into the pot, test temperature, and if it’s warm enough to serve, ladle the drink into mugs.

Stout hot chocolate.

We put up the tree a week or so ago, and the cat is just thrilled. It was cute at first, the way she’d clamber up the middle and make a nest of her own legs and tail in the branches. We didn’t put ornaments on at first, because we thought that we could get her used to the tree so she’d ignore it, but it turns out she intends to do no such thing.

Irritating as she is about the tree, the cat has had a calming effect on our holiday season. This will be our third Christmas married to each other, and so far it has not been marked with the usual bickering, moping, or scrambling to get everything done once we’ve decided we can save the fighting for February because we’re bored then anyway. It’s still early, but I’m optimistic. We’ve committed to fewer events this year, and we’re not spending so many evenings and weekends running around. We’re spending our time eating comfort food and entertaining friends and petting the cat, and it’s working out pretty well so far.

And with the exception of the dinner I ruined tonight, which was not salvageable and which I and subsequently pouted about for an hour and a half, this evening was fairly relaxing. We watched a holiday movie, and I made hot chocolate.

I love hot chocolate, but don’t make it very often – it’s a treat, and the last time I made it was this time last year. Tonight’s batch was made with stout,  just enough melted dark chocolate, a bit of milk, and cream to fill the whole thing out. It was rich and dark like coffee, and its effect verged on sedation. Nick was in bed by 9:45, suddenly overcome by feelings of warm snuggliness and a desperate need for his pillow.

The recipe will make enough for two to four people, depending on how big your mugs are. It’s rich, so you will not need a lot. It’s not too sweet, but pleasantly  bitter with that dark chocolate and beer. We drank it as dessert after Nick finally made grilled cheese sandwiches to make up for dinner.

Stout hot chocolate

  • 1 1/2 cups stout or your favourite dark beer, at room temperature
  • 4 oz. chopped dark chocolate
  • 1 cup milk
  • 1/2 cup cream
  • 1/2 tsp. vanilla

Put chocolate into a saucepan over medium-high heat, and pour over stout, whisking briskly to knock out any bubbles and to ensure the chocolate melts without burning. When chocolate appears to have melted, add milk. Stir occasionally until the whole thing comes just to a simmer – you don’t want it to boil, but it doesn’t hurt to have it come close.

Taste. Depending on the beer you use, you may find this a touch too bitter. If that’s the case, add a tablespoon of granulated sugar (or to taste).

Whisk in cream and vanilla. Serve in mugs, with a dollop of whipped cream if you’re feeling saucy (or sulky).

Orange granita that tastes like Creamsicles.

I have had three cold showers today.

Outside is lovely, bright and beautiful and exactly what I was hoping for, but inside – my goodness. Everyone is flat. And covered in a sticky, glossy film of the kind of sweat that never dries. There is no air conditioning here, or at work. And yet, I have not adapted. The cat seems to be suffering the most, and looks like a puppet without a hand, just tossed on the floor. And I think she might be losing it. Do cats get the heat crazies and hallucinate? Am I projecting my own neuroses? Should I stop talking about my cat? Okay. I will. After this photo.

So, yeah. We’re a little warm. We haven’t been eating any of the kinds of things that demand high heat or long cooking times. We have been drinking homemade iced tea by the gallon, and eating a lot of fruit. And today, granita. Because I don’t own an ice cream maker (I really have to do something about that) and there is no place to buy Slurpees within walking-without-sweating-distance.

Granita is actually the perfect hot-weather dessert, because it’s completely no-stress. You just haul your sweaty ass off the couch every so often to scrape the ice crystals – no churning required. It takes about three hours, but most of that time can be spent procrastinating over other things. And this granita? It tastes like Creamsicles.

Orange granita

(Serves four to six.)

  • Zest of 1 large navel orange
  • Zest and juice of 1 lemon
  • 1 cup freshly squeezed orange juice
  • 1 cup granulated sugar
  • Pinch salt
  • 1 tsp. vanilla
  • 1/2 cup heavy cream

In a pot over medium-high heat, combine citrus zest, juices, sugar, and salt. Whisk until sugar has completely dissolved – two to three minutes.

Remove from heat. Whisk in vanilla and cream, and pour the whole thing into a glass pan or pie plate. And then put it in the freezer.

Every hour for the first three hours after that, pull the juice out of the freezer and scrape with a fork to move the ice crystals around, which keeps them from becoming a solid mass. After that, just pop in every once in awhile to be sure that all is well, scraping as needed.

Serve as is, or with whipped cream.

Remove from the freezer about ten minutes before serving, and scrape with a spoon into serving dishes. Serve as is, or with whipped cream. Swoon.

If, like me, you ate a kilo of Mini Eggs this weekend, a little bit of stewed rhubarb is probably exactly what you need.

You see that terrible disaster? It’s the first thing on my to-do list this week, and I’m a little overwhelmed. We’ve just had a three-day weekend of constant going and doing, and I don’t even recall cooking anything, and somehow, this is the aftermath. Even the cat is tired and doesn’t want to do anything.

This week and the early part of next week will be very busy, as I’ll be back to work next Thursday. Hooray! I have enjoyed unemployment (my four-week paid vacation), but it’s going to be great to be back. And back better than ever, as I’m moving on up to something a little different, a little more challenging, and likely with my own office to fill up with pictures of my cat. It’s very exciting. Nick is glad I will continue to earn an income, and I am glad that obligation will force me to brush my hair and shower, and to get out of bed before 10:00.

Best to ease into the day (and the week) slowly, I think. Stewed rhubarb with a little bit of local honey should do the trick – warm, tart, and like sweet porridge, it’s comfort in a bowl. This recipe makes about two cups’ worth, and is very good poured over oatmeal, if you prefer actual porridge, or over ice cream, which I don’t mind if you have for breakfast.

I prefer to stew greener rhubarb, as often it’s almost too sour to do anything else with. Red rhubarb has greater possibilities, which I am sure we’ll get into later. Stewed rhubarb is a very good start though, and you can make it all through rhubarb season using apples as I’ve done here for the early part of the season, or summer berries as the season continues. Strawberries are the obvious choice later in the season, but blueberries can be used as well, to great effect. This is also a recipe that Miss Rosa can adapt to the GI Diet, and the restrictions therein.

Stewed rhubarb

(Makes one to two servings, however the recipe is easily multiplied.)

  • 1 lb. rhubarb, cut into 1/4 inch slices
  • 1/2 lb. apples, finely chopped
  • Honey, to taste

In a medium saucepan over medium heat, combine rhubarb and apples with 1/4 cup of water. Stir occasionally to ensure fruit doesn’t stick to the bottom of the pan, until rhubarb and apple have disintegrated and the mixture resembles pink applesauce, 15 to 20 minutes. Sweeten with honey to taste, and serve warm.

Burdock pickles.

Right now, at this very moment, I am making the brightest-tasting tart ever to be enjoyed in February, but there’s a lull in the process as my crust and my custard are cooling. I’ll tell you about it tomorrow.

I say that a lot. I said it about the burdock. So, lest you think I am being evasive and not sharing the magnificent joys of burdock root, I pickled it. All eight feet, which amounts to three little jars of spicy, garlicky pickles, all cooling on my windowsill.

They’re a lot like carrot pickles, which is exciting. Actually, they’re a lot like David Liebovitz’s carrot pickles, because I adapted the recipe from his site. Except that instead of two cloves of garlic smashed, I used four whole cloves of garlic per jar, and instead of cider vinegar, I used rice vinegar and a tasty drop or ten of mirin. ALSO, they’re spiced with one minced hot red pepper, and not fennel. Pretty good, at least based on the initial round of tasting – once they’ve stewed in their juices for three to six weeks, I am sure they will be awesome.

So there you have it. Follow through, late as usual, but enthusiastic nonetheless.

Bribe Santa and warm your little bones with Mexican hot chocolate.

There was fog this morning, and I almost thought it was snowing. It was dense in parts, but clear in others, and maybe it wasn’t fog as much as it was the fluff of a low-slung cloud, but for the whole rest of the day I felt a chill in my bones. Especially the little ones in my feet, to where the heat of the office never seems to creep.

Tonight was the first night in a long stretch of nights where there wasn’t talk of holiday logistics, empty bank accounts, frustrating jobs, or family pressure. No leaving the apartment, nothing frantic. This evening, with a stack of toys and two rolls of paper to bring together, I ate this for dinner, and there was frothy chocolate and I felt warmth and cheer, as far down as the tiniest bones in the tips of my toes.

Please make this right now.

Mexican hot chocolate

For each big mug of hot chocolate, you will need:

  • 2 oz. dark chocolate (70% cocoa), chopped
  • 1 cup whole milk
  • 1/2 tsp. pure vanilla extract
  • 1/4 tsp. cinnamon
  • 1/4 tsp. Mexican chili powder (or to taste)
  • 1.5 oz. Kahlua (or coffee liqueur)

In a saucepan over medium heat, melt dark chocolate into the milk, whisking as you do so that the chocolate doesn’t burn on the bottom of the pan. Once the chocolate is melted, stir in the vanilla, cinnamon, and chile powder, then whisk continuously until the mixture comes to just a boil. It’s got to be frothy, with a dense layer of bubbles on top.

Measure Kahlua into your mug, and then pour the hot chocolate mixture in. Stir to combine, and then drink right away. You can top it with whipped cream or marshmallows if you like, or on its own, with a side of sugar cookies for dunking.

This is rich stuff, and can work all on its own as dessert. It’s sweet, but not too sweet, and layered with spicy, robust flavours – dark chocolate, coffee, vanilla, and spice. It’s robust. It’s infinitely better than any seasonal hot chocolate that you’ll find at Starbucks or its ilk. And it goes well with the smell of wrapping paper, cookies, and tree.

Three more sleeps (that’s it!) and Santa’ll be here! I’ll bet if you leave a mug of this out for him, he’ll leave you something equally special. It’s caffeinated, so if you make yourself a mug too, maybe you’ll even stay up late enough to greet him?

Buttermilk apple fritters: Breakfast of big-boned champions.

I kind of felt bad, a little, because it seems as though I am mainlining fat these days, which is not usually a big deal to me because on the one hand, obesity is a serious illness and bad things happen to you and you can’t buy clothes at regular stores and diabetes and blah blah blah.  But on the other hand, if I get super fat, maybe I’ll qualify for disability benefits and then I won’t have to go to work or worry about clothes – I’ll get to sit around eating deep-fried stuff all day while wearing a muu muu and completing that novel I keep pretending I’ll ever finish, and maybe the government will even pay for cable. If I get Nick super fat too then I won’t even have to worry about him leaving me for someone with a neck.

These were my thoughts this morning as I pondered the last of the buttermilk that I inherited from my neighbour and Grace’s friend, Ayesha, who is heading to Kenya suddenly and needed help emptying her fridge.

I started a little batch of crème fraîche on my kitchen counter (one cup heavy cream to two tablespoons of buttermilk, left to sit in a jar at room temperature for 18 to 36 hours until thickened), and then there were leftovers. And I have two apples, which I was going to eat the way one normally eats apples, but then I realized, I’m on vacation and we’re moving in two weeks so any time I am not spending feeding us or checking the mail or procrastinating should be spent packing and that’s when I got out the grater and started heating the oil.

I can justify pretty much anything, by the way, in case you hadn’t noticed. Anything.

Buttermilk Apple Fritters

  • 1 cup all-purpose flour
  • 1/4 cup dark brown sugar
  • 2 tbsp. maple syrup
  • 1/2 teaspoon salt
  • 1 1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/3 cup buttermilk
  • 1 egg
  • 1 cup grated Granny Smith apple

Topping:

  • 2 tbsp. confectioner’s sugar
  • 1 tbsp. cinnamon

Mix together all ingredients except for the apple until well combined. Fold in the apple, and let rest for ten minutes.

In the meantime, in a heavy-bottomed pot, heat about two quarts of oil to 350°F, or until a little splotch of batter dropped into the oil fizzles immediately and rises to the top.

Now you get to decide how big you want these things to be. I used a spatula to awkwardly ladle these out, but you can make them as big or as little as you want. My way made eight. Keep in mind that the cook time will vary, but I fried my fritters for about two minutes per side, until they were deeply golden and crunchy-looking.

Once the fritters are fried, cool on a few sheets of paper towel. Sprinkle cinnamon sugar mixture over top of hot fritters, and serve immediately. If you are also on holidays, feel free to crack open a chilled bottle of Gewurztraminer as well. Maybe don’t eat them all in one sitting. This kind of thing is good for sharing, which is great, because it’s the kind of thing that people will love you for sharing with them. They’re crispy, spicy, appley, and wonderful – better than store-bought, and they’ll be gone almost as soon as you put out the plate.
