Mushroom and butter bean ragù

By mid-morning, there was chaos. The baby has been sick and only seems able to comfort himself by wailing, though he will pause briefly for food – but only briefly.

The cat needs her nails done but won’t sit still for it, and if she’s not hanging off the seat of my pants by her claws she’s attempting to bury her wet food under the mat in the hall or scratch holes into the garbage bag that’s waiting to go out to the bin. When I finally got the baby down for a nap I came out to find the cat licking my sandwich.

“You’re all a bunch of jerks!” I yelled at no one in particular, and foraged a lunch of stale Bugles and a glass of white wine that may have been sitting out on the coffee table since last night. I glared at the cat but she has made it clear that apologizing to me is beneath her.

Six weeks ago I joined the Learn to Run clinic at the local Running Room, partly to get back into shape. It was not a great idea because I don’t enjoy running – what’s the point unless you’re being chased? It means rushing out of the house on Monday evenings after Nick gets home from work, and we end up eating dinner late while having to juggle laundry and any mess left over from the weekend. I usually dread it but tonight I couldn’t wait to go. These past few days I have come to understand why someone might go out for a pack of cigarettes and just not come back.

So, you know. There are highs and lows. And sometimes there is enough time in the day to linger over the stove, and some days dinner comes together in a few hasty minutes after the kid goes down for the night. Tonight was one of those hasty nights, and I’m calling the result a ragù even though it contains no meat and did not simmer for very long at all – I loaded it up with the kind of things that make it feel like it simmered long (oaky wine, soy sauce, mushrooms, Parmesan cheese), but it was only 15 minutes, while the pasta cooked. I don’t think anyone’s going to argue with me today.

If you can’t find canned butter beans, use one cup fresh or frozen lima beans or any other canned white bean.

Mushroom and butter bean ragù

(Serves 4.)

  • 3 tbsp. olive oil
  • 1 shallot, minced
  • 2 carrots, finely chopped
  • 2 stalks celery, finely chopped
  • 4 cloves garlic, minced
  • 2 tsp. chopped fresh rosemary
  • 1 tsp. red pepper flakes
  • 1 tsp. smoked paprika
  • 1 tsp. ground black pepper
  • 1 lb. mushrooms, roughly chopped
  • 1/2 cup oaked white wine, such as Chardonnay
  • 1 bay leaf
  • 1 14 oz./398 mL can diced tomatoes
  • 1/2 lemon, zest and juice
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp. soy sauce
  • 1 14 oz./398 mL butter beans, drained and rinsed
  • 1/2 cup chopped fresh parsley
  • Salt to taste
  • 1 lb. fettucine

In a large, heavy-bottomed pan, sauté shallot, carrot, celery, and garlic in olive oil over medium-high heat until vegetables have begun to sweat. Add rosemary, red pepper flakes, smoked paprika, black pepper, and mushrooms, and cook until mushrooms have released their moisture, about two minutes.

Add wine and bay leaf, scraping the bottom of the pot to ensure no bits have stuck to the bottom. Reduce heat to medium, and simmer until liquid has reduced by half, one to two minutes.

Add tomatoes, lemon zest and juice, Parmesan cheese, and soy sauce. Simmer another five minutes, stirring occasionally.

Meanwhile, bring a pot of salted water to a boil. Add fettucine, and cook according to package directions – five to seven minutes – until al denté (or cooked to taste).

Add butter beans to the ragù, and continue to simmer until fetuccine is cooked. Drain pasta, and add to the ragù. Stir well. Taste, adjusting seasonings as needed. Add parsley, and serve.

Sweet potato and pear barlotto.

Around here, risotto is a favoured comfort food. I like its toothsome porridginess (can that be a thing? Or is that redundant? Can porridge be toothsome?), and the way it lends itself to infinite variations. Nick likes carbs and wine and cheese. Who doesn’t, really?

It’s been cold lately, and we’re tired. We’re in need of comfort, especially after spending so much time comforting this ten-pound pork chop at the expense of uninterrupted sleep and personal hygiene.

Too often we seek solace in take-out. So while I crave risotto, it would be wise to make a healthier choice in light of the tempura and pulled pork and fast-food cheeseburgers we’ve consumed this past week. Pearl barley stands in nicely for arborio rice, and loaded with veggies this barlotto makes a meal that’s equal parts soothing and nutrient-rich. Make it as a main course for Meatless Monday, or serve it as a hearty, autumnal side dish with roasted pork or chicken.

Sweet potato and pear barlotto

  • 1 lb. sweet potato, peeled and diced
  • 1 lb. firm-fleshed pears, diced
  • Olive oil
  • Salt
  • Pepper
  • 3 tbsp. butter
  • 4 cups vegetable stock
  • 1 shallot, minced
  • 1 carrot, finely chopped
  • 1 stalk celery, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp. ground black pepper
  • 1/2 tsp. dried rosemary
  • 1/2 tsp. dried thyme
  • 1 cup pearl barley
  • 1 bay leaf
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup chopped fresh parsley, plus additional for garnish

Preheat oven to 400°F.

Toss sweet potato and pears in oil, and sprinkle with half of one teaspoon each salt and pepper. Pour mixture into a 9″x13″ baking pan, and roast 35 to 40 minutes until golden, turning mixture halfway through cooking.

Heat stock in a pot over medium heat. Bring to a simmer, then reduce to low.

Heat two tablespoons butter and one tablespoon olive oil over medium-high heat. Add shallot, carrot, celery, and garlic, and sauté for one minute. Add pepper, rosemary, and thyme. Add barley, stirring to coat in butter and oil, then add bay leaf and wine. Stir frequently until liquid dissipates.

Add stock one cup at a time until absorbed, about 30 minutes, stirring regularly.

Add cheese, then taste. If you use store-bought stock, you likely won’t need to add salt. Adjust seasonings to taste.

Stir in an additional tablespoon of butter, then toss with fresh parsley. Serve immediately, with additional parsley for garnish.

Rabbit cacciatore.

Yesterday Nick and I celebrated our third wedding anniversary. Kind of. I made a nice dinner, and then we zoned out in front of a bunch of cooking shows on the PVR. This year has kind of been a wash, celebration-wise; we haven’t celebrated any of our milestones properly. Nick turned 30 on Friday and we didn’t have plans, and I was all-day morning-sick on my birthday in April. We’re thinking of putting off Christmas until January. It’s been a busy year.

Fortunately I am a bit of a hoarder, and I figured we’d be all out of energy right around now. I have stocked the freezer, fridge, and pantry with everything we’ll need to eat reasonably satisfying and healthy meals until my employment insurance kicks in, so I was able to put together a luscious rabbit cacciatore while the baby dozed and the cat napped.

Rabbit is a very lean meat and a great alternative to the usual chicken or pork. It’s also a sustainable alternative, as rabbits are small, plentiful, reproduce quickly, and do not have the same impact on the environment as larger or more industrially farmed meats. If you can’t find rabbit at your local market, ask your butcher.

I adapted this recipe from Simply Recipes, adding pancetta, more veggies, a spot of wine, and some different herbs and spices, and it was just fancy enough for an anniversary dinner, but easy enough to put together between feedings and phone calls and commercial breaks.

If you don’t have bunnies in your freezer, you could substitute six to eight chicken thighs for the rabbit pieces. Serve over pasta, polenta, or rice.

Rabbit Cacciatore

(Serves six to eight; adapted from Simply Recipes)

  • 2 heads garlic plus 3 cloves
  • 4 tbsp. olive oil
  • 1 2- to 3-pound rabbit, cut into six or eight pieces
  • 1/4 cup all-purpose flour
  • 1/4 lb. pancetta, diced
  • 1 medium onion, diced
  • 2 ribs celery, diced
  • 1 large carrot, diced
  • 1 tbsp. capers, chopped
  • 1 tsp. red chili flakes
  • 1 tsp. dried rosemary
  • 1 tsp. dried oregano
  • 1/2 tsp. dried thyme
  • 1 large red bell pepper, chopped
  • 1/4 lb. mushrooms, sliced
  • 1/2 cup red wine, such as Cabernet-Sauvignon
  • 3 cups chopped tomatoes (or 1 28-oz can diced tomatoes including juice)
  • 2 bay leaves
  • Salt and pepper, to taste
  • Chopped parsley

Roast two cloves of garlic in an oven preheated to 350°F for 30 to 45 minutes until golden and tender.

Heat olive oil over medium-high heat. Pour rabbit pieces, flour, and about a teaspoon each salt and pepper into a sturdy plastic bag. Hold or seal the top of the bag, and shake to coat rabbit.

Brown rabbit pieces in olive oil, then remove to a plate. Set aside.

Brown pancetta in same pan. Add onion, three chopped cloves of garlic, celery, and carrot, and cook for three minutes.

Add capers, chili flakes, rosemary, oregano, and thyme. Stir to coat pancetta and veggies, then add bell pepper and mushrooms. Cook an additional two minutes. Add wine and scrape browned bits off the bottom of the pan, then reduce heat to medium. Add tomatoes and roasted garlic and bay leaves. Taste, adjusting seasonings as needed.

Add rabbit, pushing the pieces into the pot so that they are submerged. Cover, reduce to medium-low, and cook for 35 minutes, until rabbit is cooked and tender. Remove lid and simmer an additional 10 minutes to reduce sauce. Sprinkle with parsley before serving.

Pepper pot.

A friend and I once took a Caribbean cooking class through the Vancouver School Board’s Continuing Education program. I had taken other classes through the same program and they were all taught by professional chefs and I learned some fabulous things, including recipes I still use on a regular basis, so I thought the Caribbean class would be equally useful.

When we got to the first class, the instructor was wearing a lot of red lipstick, some of it on her lips, and a T-shirt printed with a picture of her face. She was no longer allowed to sell her herbs and spices in class – the school board forbade it – so if you wanted to come out to her car after class, she’d sell you spices in Zip-Loc bags. I can imagine how it would look, buying a baggy of dried thyme from the trunk of someone’s car in a south Vancouver high school parking lot, but I guess that’s how she supplemented her income; she would mention her spices two to three times, every time.

She also ran a catering company and would deliver your Christmas turkey or Hanukkah feast, and taught she taught basic cookery to children (I was once handed a recipe for a spaghetti dessert involving raisins, cottage cheese, and cinnamon – I think it was supposed to be Noodle Kugel, but it missed the mark … a bit). The course was four classes long and basically one giant commercial. And the food was terrible.

What I did get out of the class, aside from a Certificate of Attendance and a desire for my own face on a T-shirt, was an introduction to some of the basic flavour combinations that comprise Caribbean cooking. What follows is a version of Caribbean Pepper Pot, which I was introduced to in that class, but which has evolved into something less complicated but infinitely more complex.

It is mildly sweet, as spicy as you want it, and full of autumn veggies, which makes it a cozy dinner that’s lovely this time of year. I hope you’ll try it. And no need to follow me out to my car afterward.

Pepper pot

(Serves six to eight)

  • 2 tbsp. vegetable oil
  • 8 chicken thighs, bone in, skin removed
  • 1 medium onion, halved lengthwise and sliced
  • 3 cloves garlic, chopped
  • 2 tbsp. dark brown sugar
  • 1 1/2 tsp. dried thyme
  • 1 tsp. ground allspice
  • 1/4 tsp. ground cinnamon
  • 2 bay leaves
  • 1 1/2 lbs. yams or sweet potatoes, peeled and chopped into one-inch pieces
  • 2 cups diced fresh tomatoes
  • 1 to 2 scotch bonnet or habañero peppers, pierced (unless you like it really hot, then chop the peppers finely … but be careful)
  • 2 cups chicken stock
  • 1 14 oz. can coconut milk
  • 1 lime, zest and juice
  • 1/2 lb. okra, chopped into one-inch pieces
  • 1 red bell pepper, chopped
  • 1 cup chopped kale, packed
  • 1/2 cup chopped fresh cilantro
  • Salt and pepper, to taste

Heat the oil in a Dutch oven or other large, heavy-bottomed pan over medium-high heat. Add chicken thighs and brown each side. Remove from pan and set aside.

Add onions and garlic to the pan, scraping up any chicken bits from the bottom. Add bay leaves, brown sugar, thyme, allspice, and cinnamon. Cook until fragrant.

Add tomatoes, sweet potatoes or yams, scotch bonnet or habañero pepper(s), chicken stock, coconut milk, and lime zest and juice. Bring to a gentle boil, then reduce heat to medium, and simmer for 30 minutes.

Add okra, red pepper, and kale and simmer for an additional 10 to 15 minutes, until okra is soft. Stir in cilantro. Taste, adjusting seasonings as needed. Remove pepper and bay leaves. Serve with rice.

On moving apartments and melting cheese.

We have a new apartment. We have the Internet, at last. The landlord has promised that I’ll soon have a new stove. And now that we’ve had our first dinner party in our new apartment, the place feels like home and I can breathe. Nick painted the place before we moved in and it’s very blue, so for the first time ever we’re living together in a place that we can describe the colour of using adjectives that don’t also describe bodily fluids. The cat still blends in with all the furniture, but Nick looks better because the walls match his eyes.

We have more windows and better light, and we’ll have lots of time to enjoy these things as the rent on the place will prohibit us from spending much on anything else. Cat has not settled down since we finished moving in last week because there are so many new rooms and cupboards and hallways to explore, and I hear her little voice from all the corners of the apartment reminding me she’s still here. She checks in once in awhile, but she still has a lot to do. There’s an upstairs to this place, and she has to rub her face on every inch of every step and that takes more energy than a five-pound furball can muster all at once.

My kitchen in this new place is the same size as the old one. The advantage is that here I have a window above the sink, and the drawback is that my fridge is half the size. I am twice the size now, having rounded the corner on my thirty-third week with a belly that’s measuring closer to 35 or 36 weeks, so I have yet to start feeling comfortable in my space. It’s hard to relax when you’ve got a habit of knocking crap off the counters or searing-hot pans off the stove at every turn. All of my shirts have stains on them.

I wanted to have friends over for dinner, because a feast in a new apartment is like a bottle broken on the hull of a boat; it’s how you make things official. The first dinner shared with people in a new apartment (not eaten out of boxes on the floor, but at an actual table) is the thing that makes the place a real home. Ordinarily my effort would reflect the importance of this, but I am irritable and my back hurts and the more things I have to do, the more complaints I am able to muster. Fortunately, we have a raclette.

A raclette is a wonderful thing. It’s like a fondue pot, except instead of dipping things into melted cheese, you pour melted cheese over things. We learned about raclette a few years ago in the home of my friend Chelsea and her then-boyfriend, an accented Swiss-German named Marco who was a Physics professor by day and a drummer in a Celtic punk band by night. Raclette is both the name of the apparatus and the type of cheese, though we used good white cheddar and it was delicious.

Your guests will cook their meat and veggies to taste on top of the raclette grill while melting cheese under its broiler. They will eat their cooked morsels with potatoes and drizzle the melted cheese over top. They will do this more times than they can count, and at the end of the meal they will be very sleepy.

To make a proper raclette meal, you boil more quartered red or white potatoes than you think you’ll need, and slice quite a lot of cheese. I boiled a pound of potatoes per person. There were five of us, so I sliced two pounds of cheese. We had asparagus, mushrooms, zucchini, and grape tomatoes for our veggies, and cubed steak, chopped bacon, shrimp, and rounds of Farmer’s Sausage for our protein. Start with the bacon to lube up the grill a bit before cooking the other things. If you’re a vegetarian, wipe the top down with a bit of olive oil before starting.

Because a meal based on the holy trinity of meat, cheese, and potatoes can be, uh … rich, set the table with little bowls of acidic, pickly things, like olives and beet pickles and peppadews and gherkins and cocktail onions – whatever you have in your pantry will do, but if you have to make a special trip, make use of a store’s olive bar, where you can buy just a few of everything for not very many dollars.

Little ramekins with good salt, freshly ground pepper, and Dijon mustard round the dinner out. The whole thing ends up being an inexpensive, rather European feast, and it is made better with wine or good cold beer. It is a warming treat in the wintertime. You will want to have Beirut playing in the background, and perhaps you and your guests will wear sweaters and it will be snowing.

I have bought raclettes as wedding gifts, and know that you can get a pretty good one for $50, less if there’s a sale. Department stores sell them in their small appliance sections, and better cookware stores sell more expensive versions (up to $250), with heavier-duty grills. We have a fancy one, because my parents bought Nick a raclette for Christmas the year he discovered his obsession with it. Ours serves eight people, but Nick would happily melt cheese every night on his own if cheese in Canada was cheaper and if he didn’t have to clean the raclette every time.

There is little more enjoyable than sitting around a table full of food with people who are genuinely enjoying themselves, though keep in mind that you should take the meal slowly, and if you are planning some after-dinner diversion to start the meal a bit earlier. If dinner ends at 10:00, the night ends at 10:00. Meat and potatoes and cheese are good inspiration for long naps, but not one of your husband’s nerdy board games even if that was the plan at the start

A perfect day for pickle-making.

Today we made 47 jars of pickles with Nick’s sister and brother-in-law. I haven’t had homemade pickles since my grandmother made them – it’s been too many years. And I hadn’t made them in the meantime because they are a lot of work, and because I had somehow elevated pickle-making to an “I’m a grown-up!” status symbol and I hadn’t felt competent enough with my canning pot to do that yet.

We brought home 12 jars of pickles, which should just about get me through the year if Nick only has one per jar.

This feels like an achievement, especially after buying so many disappointing jars of commercial dill pickles for so many years. I am crossing “make pickles!” off my life’s to-do list, and making plans for next year’s batch.

This was a pretty thrilling sight. I don’t think I would have enjoyed doing it alone, but four people made quick work of 40 pounds of pickling cukes – we took the afternoon, and there was plenty of time for a leisurely dinner and a bowl of ice cream afterward. It was easier than I thought it would be, and I recommend you try it, especially with an eager group to help.

Halibut Ratatouille en Papillote.

Holy crap this pregnancy stuff is exhausting. Yesterday I ran out of breath walking while eating an ice cream cone, and any “glow” one might detect in my face is probably from climbing, like, three stairs. Or possibly it’s the aftermath of an ugly cry, which was probably related to some snack I couldn’t have and probably happened in the middle of a crowded Safeway or 7-11. I have yet to become serene. I have yet to stop perspiring. It’s all very romantic.

But I’m waddling around, because the pursuit of food is constant, and because the doctor said I have to eat protein and the only thing in my fridge right now is fruit (and there is so much fruit). Nick bought me a case of freezies and I am destroying it. With my face. I am getting all the exercise I need, but I can never eat enough. If you can imagine a sweaty Ms. Pac Man annihilating everything edible between Arbutus and Main, you’ve got a pretty accurate mental picture of me right now. No one may photograph this.

Even the cat is judgmental.

To add to my confusion and exhaustion, I am also supposed to rest more. “I can tell just from looking at you that you’re the type to retain water,” my doctor said, so now I have to lay around with my feet up for 10 to 15 minutes, three times a day. It seems that the only time I can find to do this is when Chuck Hughes is on TV, and even though I suspect he’d be reluctant to run away with me now, I do enjoy his pretty face and his lemon meringue pie tattoo. And his cooking show.

I found some time to lay around leering at Chuck this weekend, and it was fortuitous. He was making a lovely, summery dish with black cod; the fishermen down at the wharf at Granville Island have had long fillets of halibut that would suit the dish perfectly, and the makings of ratatouille are now available at my little market. And so, because I need to eat more protein and because I learned the recipe while sitting around getting rested, I adapted Chuck Hughes’ Black Cod Ratatouille en Papillote to suit some lovely local halibut. There’s not much sense in me re-writing the recipe here, as I literally did everything he did just with a different white fish (though I did add lemons, which was very clever), but I’ll show you how it went, and maybe you’ll make it yourself some hot day this week.

It cooks in 20 minutes, and should feed four people. “En papillote” sounds complicated, but it’s really just cooking in a strip of parchment that’s been folded over in the middle to form a seal and then twisted closed at the ends. What results is a perfectly steamed piece of fish, and beautifully cooked veggies, and it’s easy and requires few dishes and you don’t have to have the oven on too long. You could use salmon, or the long fillet of whatever fish that’s in season where you are. Serve with salad and lemonade.

Zucchini parmigiana sandwiches.

Zucchini is back! And early tomatoes, among other things, and my fridge is full of all the edible colours and I am delighted. I’ve started buying large amounts of things to turn into freezer meals for when I no longer have the energy to feed myself or the ability to reach the stove, which should happen right around the end of the harvest season. I am in the process of assembling zucchini parmigiana in foil containers (no dishes!), and had extra bits, and thought they’d be quite excellent in sandwiches.

For the sandwiches, I fried the zucchini instead of roasting it, and used leftover marinara sauce. You can make it fresh, if you like – I quite like this one from Smitten Kitchen with a bit of fresh basil – or you can use whatever you have hanging around in your fridge or pantry. Something simple with onions, garlic, tomatoes, and herbs should do just fine. Any plain sandwich bun will do, and whole wheat would probably be nice.

These smell fabulously summery, and in spite of their crispy fried bits and garlic-toasty top half, they’re pretty light. The tomatoes and basil play well with the breaded zucchini, and there is just the tiniest bit of spice from the Tabasco and red pepper flakes. They would be excellent with cold beer or red wine, and beg to be eaten on a patio in the sunshine. Maybe your Meatless Monday is warm and summery? We had to make do with pretend as it’s been damp and grey around here, but these certainly brightened our moods.

Zucchini parmigiana sandwiches

(Serves six to eight.)

  • 8 buns, such as Kaiser or Calabrese
  • 1 lb. zucchini, sliced into 1/2-inch rounds (about 24 pieces)
  • 3 large eggs, beaten
  • 1 tsp. Tabasco or other hot sauce
  • 1 cup panko
  • Zest of one lemon
  • 3 tbsp. butter, at room temperature
  • 3 tbsp. olive oil
  • 2 cloves garlic, finely minced
  • 1 tsp. red pepper flakes
  • 1 cup marinara sauce
  • 1 cup shredded Provolone
  • 2 tomatoes, thinly sliced
  • 16 basil leaves
  • Salt and pepper, to taste

Slice buns in half horizontally and set aside.

Whisk together eggs and Tabasco. Combine panko with lemon zest, and stir to combine. Dredge zucchini slices first in egg, then in bread crumbs. Fry in a large pan over medium-high heat, in grapeseed or olive oil, until golden, 90 seconds to two minutes per side.

Place on a plate lined with paper towel and sprinkle with salt while still hot.

Preheat oven to broil.

In a small bowl, mush together butter, olive oil, garlic, red pepper flakes, and salt and pepper (taste and adjust seasonings as desired). Divide equally between the eight buns, spreading on the top half only. Place on a large baking sheet.

Place zucchini slices, two to three per bun, on the other half of each bun. Top with two tablespoons each marinara sauce and provolone, and place on the same baking sheet as the top halves.

Place under broiler and cook until cheese has melted and the buttered half has turned golden, two to three minutes.

Finish each sandwich with fresh tomato slices and basil leaves. Serve hot, with lightly dressed greens on the side. Enjoy!

 

Corn and asparagus salad

As of about 1:30 p.m. last Friday, it is now summer on the west coast and I am wearing a sundress and remembering my thighs now that they are not prevented by denim or Lycra from rubbing together.

Finally, things I’ve been waiting a year for are in season again, and the sun is warm into the evening so we can garden after work or enjoy a fizzy drink or two and a tomato salad on a patio somewhere and be social. I bought this season’s first zucchini on Sunday. I picked strawberries in the sunshine on Saturday. On Friday I ate corn in a park beside a marina.

My Dad trimmed his garlic plants this weekend and sent me home with a wealth of stinky, curly green stalks with which to make pesto and salads until the garlic oil ekes from our pores and our coworkers beg us to eat anything else. And corn has begun to appear in the markets, just as the last of the frozen stuff has hardened into an iceberg that smells like freezer and deserves to be thrown out.

So for this Meatless Monday, dinner came together in a fifteen-minute frenzy of blanching, chopping, and tossing, and it was cool and bright-tasting, with lemon and tomatoes, and basil, and piquillo peppers from a jar in the fridge and those pungent, fabulous garlic scapes.

There would have been a handful of Parmesan cheese thrown in at the end but I was in such a rush to eat that I forgot. No matter. It’s just fine sprinkled on after, and it’s just fine without if you want to keep things vegan. It would also be wonderful with grilled scallops or spot prawns, or maybe halibut, but you can do that some other night.

Corn and asparagus salad

(Serves four as a main dish, six as a side.)

  • 1 lb. asparagus, trimmed, cut into bite-size pieces
  • 2 large cobs corn (about 1 1/2 cups)
  • 2 cups diced fresh tomatoes
  • 2 diced piquillo peppers (or roasted red bell peppers)
  • 1 large shallot, minced
  • 1/2 cup garlic scapes or scallions, finely chopped
  • 1/2 cup grated Parmesan cheese
  • 1 lemon, zest and juice
  • 1/4 cup extra virgin olive oil
  • 2 tbsp. minced fresh basil
  • 1 tsp. red pepper flakes
  • 1 tsp. Kosher salt
  • 1/2 tsp. ground black pepper

Blanch asparagus in a large pot of boiling water. Cool in an ice water bath until cold.

Scrape corn from cobs into a large bowl. Add tomatoes, peppers, shallot, garlic scapes, Parmesan cheese, and lemon zest. Add asparagus.

Whisk lemon juice, olive oil, basil, pepper flakes, salt, and pepper together. Taste, adjusting balance as needed. Pour over salad. Toss to coat.

Serve immediately.

And then I fell into the couch and ate watermelon salad until none remained.

Sometimes I have no idea where the time goes. My nightstand is still littered with evidence of Paris and the suitcase which still features the Air Canada tags from my trip in May is still on the floor. Not long after I got back and sort of unpacked we stuffed the suitcase with summer clothes and light formal wear and drove six hours to Osoyoos, a small town in the Okanagan – wine- and rattlesnake-country, for those unfamiliar with the region.

Where Vancouver was rainy and bleak, Osoyoos was hot and sunny, and the dry desert air was a rare treat for my hair, which cannot be worn down most of the time as disco is dead and there is no place for big blonde disco hair in my day-to-day life. I ate ice cream and we got suntans on the beach and beside the pool at the resort where we were staying for Nick’s youngest sister’s wedding. For some reason, theirs was the only grey day while we were up there.

We’ve been back two weeks and the suitcase hasn’t moved from its spot on the bedroom floor, and I’m pretending that it’s still there because the cat loves it. She has claimed it as her own personal chaise, and she stretches her furry little body diagonally across it, chewing the zipper pull on one corner and batting at the pull on the other end with her back paws.

In the time between trips and in the time since we’ve been back, there were the playoffs, and hockey games every two days for weeks and weeks. Nick aged thirty years during the Vancouver-Boston series, and his liver grew three sizes. He raged quietly as Vancouver gave up so many goals, and raged outwardly as we watched our city implode in the aftermath of Game 7. Our reaction to the end of it all has been relief.

There were other things. Nick’s sister and brother-in-law and their little girl were in town, so we attended events in their honour and then fed them a feast, and the youngest sister celebrated her wedding a second time at home, with a larger guest list, and I made the food, anticipating 80 guests. The result is that I am tempted to call our whole apartment a loss and walk away; there is icing on the living room rug and bits of dried blini batter stuck to the cat and weird smells coming from behind the freezer where I dropped and then couldn’t find several dozen blueberries and at least four pieces of pineapple.

In all of this, I have been moving slower and slower as it becomes more and more apparent that this is not a beer belly slung over the top of my jeans. I have been measuring the transition of my belly button from innie to outie, and it looks like it should complete its journey within the week.

My pants don’t fit and I want to violently devour every watermelon I see. I almost cried because a store was out of cantaloupe, and threw a fit in a different store because they had no canned orange segments. Nick said something about hormones, so I punched him. Extremely personal and very unsolicited questions, observations, and advice are now arriving in earnest. And while they have never lacked the appreciation they deserve, my boobs and what I do or do not intend to do with them are suddenly everyone’s business. The correct answer to such probing questions does not seem to be “I’m planning on only feeding the little raptor Diet Coke so it doesn’t get fat.”

It should not have come as a surprise how many people do not have a sense of humour about babies.

It will be a boy baby, by the way. Who, at the moment, compels me toward melon and leaves me ravenous for cans of fruit cocktail, who seems to want an endless supply of Hawkins Cheezies, pulled pork sandwiches, avocados, icy Cherry Coke, and cold pieces of summer fruit.

To keep things interesting, I’ve devised the following salad, which makes it possible to incorporate melon into dinnertime. It’s Meatless Monday friendly, and you can eat it on a bed of greens if you feel like it. I prefer watermelon for this.

Savoury fruit salad

(Serves four as a side dish)

Dressing:

  • 2 tbsp. light soy sauce
  • 1 tbsp. rice vinegar
  • 2 tsp. sesame oil
  • 2 tsp. sriracha
  • 2 tsp. honey
  • Juice of 1/2 lime

Salad:

  • 2 cups diced watermelon
  • 1 long English cucumber, diced
  • 1 avocado, diced
  • 1 mango, diced
  • 2 scallions, finely chopped
  • 2 tbsp. chopped fresh cilantro
  • Toasted sesame seeds, for garnish

In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sriracha, honey, and lime juice. Taste, adjust seasonings as needed, and set aside.

In a large bowl, combine watermelon, cucumber, avocado, mango, scallions, and cilantro. Toss with dressing, and sprinkle with sesame seeds. Serve cold.
