It’s our anniversary! Our second one, but Mondays are boring and also our laundry day, and for some reason I was awake at 4:00 this morning, so to celebrate we did a load of towels, had a nap, and Nick brought me orange flowers, and we went for sushi, which was delicious, though convenient.

But last night I wanted to do something kind of special, because we spent our first anniversary pushing Paul’s car across the border, which was as romantic as pushing a Honda Civic across the Canadian border in the dark and then standing under an orange street light for an hour waiting for a tow truck on the other side in November after frost has fallen and taking public transit back to the city can be.To make up for last year, this year I brought my A-game. Sometimes I like making food that takes all day, and I wanted to do something distinct to mark Sunday as separate from the rest of the weekend, during which we also celebrated Nick’s birthday. I invited Grace and Paul over to celebrate our anniversary with us, and we had so much food. Come to think of it, it makes sense now that I was up at 4:00 a.m.; there is only so much pork that one can cram into her maw and still expect to sleep through the night.

The recipe that follows is based on Jeffrey Steingarten’s recipe for Choucroute Garnie à L’Alsacienne, from his book The Man Who Ate Everything. Because I am paid considerably less than Mr. Steingarten and am routinely accosted by Nick over how much I spend on special-occasion meals (not much, by the way, but he feels that all the dollars I spend on fancy ingredients could be spent far more enjoyably on beer), there are some adjustments. Much as it saddens me, I simply do not have an elaborate collection of specialty meats on hand. One day. Perhaps with the next husband?

Choucroute garnie à l’Alsacienne

(Serves six, generously)

  • 2 smoked pig’s feet
  • 3.5 lbs. sauerkraut
  • 2 lb. bratwurst
  • 1 lb. kielbasa
  • 2 lb. other sausage (such as pork and apple)
  • 1/2 lb. bacon
  • 3/4 cup gin
  • 2 tbsp. butter or duck fat
  • 2 lbs. onions, thinly sliced
  • 2 lbs. apples, grated
  • 1 1/2 cup dry Riesling (preferably from Alsace)
  • 2 bay leaves
  • 25 black peppercorns
  • 1 1/2 tsp. caraway seeds
  • 5 whole cloves
  • 4 branches fresh thyme
  • 6 sprigs parsley
  • 1/4 cup minced garlic
  • 2 tsp. coarse salt

Place pig’s feet in a medium-size pot, and cover with water to about an inch above the feet. Simmer for one hour, then remove feet, and reduce until about two cups remain, an additional 15 minutes. Set aside.

Drain sauerkraut in a large strainer, squeezing out liquid periodically. Rinse, then continue to drain, about an hour.

Cook all three sausages and bacon. Set aside.

Simmer gin in a small pot until reduced by about two thirds. Set aside.

In a large, heavy bottomed pot over medium heat, melt butter, then cook onions until softened but not golden, about ten minutes. Add apples and sauerkraut. Stir to combine. Add gin reduction and bay leaves.

Add reserved stock, and Riesling, and two cups of cold water. In a piece of twice- or thrice-folded cheesecloth, combine peppercorns, caraway, cloves, thyme, and parsley. Tie tightly with kitchen twine and let sit in sauerkraut mixture.

Place meat on top of mixture, then scatter garlic over top, and then sprinkle salt over top. Bring to a boil, then reduce to medium low. Cover, and simmer for 90 minutes, stirring approximately every 20 minutes.

Preheat oven to 250°F. When choucroute has finished cooking, remove meat to a plate and let rest, covered in tin foil, in a warm oven. Let choucroute rest, covered and off the heat, for 30 minutes.

To serve, drain choucroute and place in the centre of a platter. Place meat on top, and scatter side dishes around, such as spaetzle or fried potatoes. Serve with sweet mustard, sour cream, and cornichons. To eat, ensure you are wearing something with an elastic waistband.

Coq au Riesling.

Sometimes I like to imagine that I am someone quite fabulous like Ina Garten or Nigella Lawson, and at the end of a grueling day of snacking and writing cookbooks and lunching with my fabulous friends in the garden and making roast chicken I come home to my sprawling manor and there is calm and wine from France and a library just heaving with books that I have all evening to sit and read while nibbling on bits of ham.

I usually imagine this on the bus, and it keeps me from sobbing or stabbing someone. The 99 B-Line is a hell of a thing, an accordion bus polluted with the tinny blitz of a thousand little ear buds failing to hold the bad music in, and it smells like a damp sheep’s crotch, and everyone wears his backpack and is telling his friend how he’s, like, probably going to medical school or that her favourite poet is TS Eliot because he’s so super deep or whatever. It’s the bus that ends at the University, and for a ride that takes 25 minutes on a slow day, it feels like the relentless march of karma getting even.

And so I escape into my head, and by the time I’ve arrived at work I have dinner planned, and even though the evening always ends at my less-than-palatial apartment which is always in frantic disarray, with its shelves that don’t heave nearly as much as I’d like, there is wine here, and a cat who very much wants to be in my lap even when I’m standing, and Nick is so nice about not mentioning that my hips are looking more and more like Nigella’s all the time. And while the fantasy is nice, I have no idea how we’d pay for it all, and we probably couldn’t keep it clean anyway.Anyway, the best part of it all is the food, and that’s something I can replicate. What follows is a version of Nigella Lawson’s Coq au Riesling, with the addition of cornstarch for thickening. It’s the perfect stew for pretending you’re someplace else, like Alsace or Nigella’s dining room, and you can have it in under an hour.

Coq au Riesling

Adapted from Nigella Lawson

(Serves four to six.)

  • 1/2 lb. thick-sliced bacon, diced
  • 1 large leek, cleaned and sliced width-wise, white and light-green parts only
  • 3 cloves garlic, chopped
  • 10 to 12 boneless, skinless chicken thighs
  • 1/2 lb. oyster or chanterelle mushrooms, sliced or torn roughly
  • 1 750mL bottle of dry Riesling
  • 2 tbsp. cornstarch
  • Salt and pepper, to taste

In a large, heavy-bottomed pot over medium-high heat, fry bacon until crisp. If you’re using a non-fatty bacon (I used peameal bacon), add a bit of butter. Stir in leeks and garlic, and sauté until leeks have softened, about two minutes. Add chicken, then mushrooms, and deglaze the pot with the wine. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 30 minutes.

After 30 minutes, remove cover and turn heat back to medium-high. Taste, and adjust seasonings as needed. Whisk cornstarch together with 1/4 cup of water, and stir into the pot. Let the mixture return to a gentle boil until thickened. Remove from heat and serve over rice, buttered noodles, or (my favourite), braised cabbage.

A Clambush at Desolation Sound.

On Friday, Grace, Laraine, Paul, Nick, and I hopped a couple of ferries and headed to Powell River for what shall henceforth and forever be known as The Ultimate Seafood Feast. Grace planned the whole thing (and included handouts), and it was lovely.

We stayed about 30 minutes out of Powell River, near Desolation Sound. There was nothing desolate about it, and not a sound except for a woodpecker and a few chirpy little red squirrels in the trees.

The point of the trip was clam-digging, though a secondary benefit was certainly relaxation. I read MFK Fisher’s Serve it Forth, Paul made sashimi of the sockeye he had caught the night before we left, and we played Scrabble and drank cocktails and cheap beer and were very civilized out there in our cabin in the woods. Nick had five naps. We were there two nights.

On Saturday morning, our eyes still glued mostly shut after our first feast night and its requisite debauchery, we wandered out to the shore to dig for clams at low tide.

It was all very thrilling. Every so often, Grace would squeal and announce that “I found the biggest one!” or skip over with a particularly lovely clam and declare that it would become earrings, a garland, or a fridge magnet stuck with googly eyes. Paul and Nick wandered off to pick mussels and oysters, and soon we had an embarrassment of edible riches.

When we got home, we all took naps, and then considered the oysters.

And then we had naps again.

And when we woke up, Laraine and I read in the living room while Nick and Paul played a game and Grace poured wine and did dishes and then when we told her not to she said “But I’m having fun!” so we let her have the kitchen.

We let the clams soak in salted water for a few hours so that they’d release any grit they might be holding onto, and Paul de-bearded some mussels. I don’t think I have ever had better clams than we had that evening – Grace made her Dad’s recipe. She poured a bit of sake, a few chopped scallions, and some garlic into the pan and steamed the clams until they burst open. They were perfect, and needed no salt. The mussels were steamed in beer and cream with fennel, and were also very elegant.

We ate dinner huddled around the stove, with Grace steaming batch after batch of clams, each of us forking bites out of the pan and dipping Laraine’s homemade sourdough into the broth. From now on, this is the only way I will serve shellfish for company.

It was so delicious, and we ate throughout the evening, into the night. And at the end of it, we sipped sparkling wine and made fun of Nick and then had cheesecake and then warmed dates stuffed with Roquefort, and there has never been anything better in the whole history of the world.

It was so hard to leave! Fortunately, we were each able to bring a few cooked clams home, so we’ll be able to enjoy a feast more each. How fresh and wonderful it all was! And how impossible to forget!

If you’re going to tart up your veggies with cheese sauce, do it with this cheese sauce.

Important news: Paul is back.

Last night, the team (Grace, Paul, Nick, and I) reconvened for our first dinner since Paul returned from Montreal, and we pretty much picked up where we left off.  Though it’s probably a fairly normal thing for most people, I thought we’d do something novel and have a dinner of meat, potatoes, and a vegetable – I called it a Dad meal, because it reminds me of the kind of meal you’d serve to a Dad, yours or otherwise.

It’s hard to have this many things for dinner when it’s just me and Nick, but with Grace and Paul in attendance, there were fewer leftovers and it was like a family dinner that didn’t involve any actual relatives. I made Hank Shaw’s Easy Duck Confit, a big dish of fluffy mashed potatoes, and broccoflower – straight out of 1992 – covered in cheese sauce.

As we’re heading into fall now, the temptation to cover everything in cheese is probably growing for you too. As hardier veggies start popping up in markets, I suggest bringing them home and covering them in this sauce. The sauce is most conducive to broccoli or cauliflower (or the weird genetic hybrid that is broccoflower), but you could put this over carrots, asparagus, spinach – whatever you’ve got. Also, this is pretty much the base I use when I make baked macaroni and cheese – obviously you’d add more cheese to that (obviously), but there you go. Look how versatile!

Cheese sauce

  • 3 tbsp. butter
  • 1 clove garlic, minced
  • 3 tbsp. all-purpose flour
  • 1/2 cup dry white wine
  • 2 cups half and half (or cereal cream – aim for about 10% milk fat)
  • 1 tsp. grainy Dijon mustard
  • 1/4 tsp. white pepper
  • Pinch nutmeg
  • 1 cup shredded Gruyere, sharp Cheddar, or other delicious, bold-tasting cheese (lightly packed – not pressed into a wad)
  • 1/2 tsp. Worcestershire sauce
  • Salt, to taste
  • 1 tbsp. chopped fresh flat-leaf parsley

In a heavy-bottomed saucepan, melt butter over medium-high heat until it foams. Add garlic, then add flour, and whisk until the three ingredients form a paste.

Whisk in wine, then half and half, then mustard, pepper, and nutmeg. Reduce heat to medium, and whisk frequently until thickened, about three to five minutes.

Add cheese and Worcestershire sauce, and taste at this point. Is it good? Does it need salt? Add salt if you need to. Is it too thick for your liking? Add more wine or dairy. You get the idea. Whisk in the parsley right before you’re done.

Pour into a pitcher and then serve, dousing your veggies as much as you like. It will be just like you remember, only better, because now you can have as much sauce as you want.

Meatless Monday: Shepherd’s Pie, sans shepherd.

I think the thing I like best about Meatless Monday is that it comes at just the right time. Monday evening is when some of us need a hearty helping of veggies to undo some of the weekend’s damage; indeed, I spent the bulk of mine throwing back rich dishes and cocktails in between naps.

Today’s Meatless Monday dish is meaty in spite of itself. It’s filled with garlicky mushrooms, rosemary, leeks, and just enough red wine. It’s topped with potatoes whipped with eggs, cream, and olive oil. And then it’s baked until the potatoes are golden and the mushroom sauce has bubbled up around the sides. Use a variety of mushrooms, if possible; I used regular white mushrooms, a couple of fat portabellas, and a few oyster mushrooms, but feel free to use whatever’s available to you. Be sure to scrape the gills from the portabellas before cooking (if using), and chop these into cubes.

It’s rich and satisfying, fragrant and delicious; it’s the sort of thing you could serve to a ravenous meat-eater and he wouldn’t know there wasn’t a spot of beef in it. Even the cat was interested, and she won’t give a sniff to anything that isn’t 95% protein.

Mushroom Shepherd’s Pie

(Serves four to six.)

  • 2 lbs. Yukon Gold or other yellow-fleshed potatoes, diced
  • 1/2 cup grated parmesan cheese
  • 4 tbsp. extra-virgin olive oil, divided
  • 1/4 cup + 1 tbsp. heavy cream, divided
  • 2 eggs
  • 1 tbsp. butter
  • 1 shallot, minced (about 2 tbsp.)
  • 2 to 3 cloves garlic, minced
  • 1 cup finely chopped leek (white and light-green part only, about two medium leeks)
  • 2 1/2 lbs. mushrooms, assorted varieties if possible
  • 2 tsp. chopped fresh rosemary
  • 1 tbsp. all-purpose flour
  • 1/2 cup dry red wine
  • 2 tbsp. soy sauce
  • 1 tbsp. Dijon mustard
  • 1 tsp. Worcestershire sauce
  • 1 tsp. black pepper
  • 1/4 tsp. nutmeg
  • 1 tbsp. chopped fresh parsley
  • Salt to taste, if needed

Boil potatoes in a large pot of water until tender, 15 to 20 minutes. Drain and mash until almost no chunky bits remain, then whip in parmesan cheese, two tablespoons of olive oil, 1/4 cup of cream, and two eggs. Taste and add salt as needed; I chose not to add salt, as the parmesan lent sufficient seasoning. Set aside.

Preheat oven to 400°F.

Meanwhile, heat the remaining oil and the butter over medium-high heat until butter begins to bubble and foam. Stir in shallots and garlic, sautéeing for two minutes until translucent. Add leeks, and saute until shallots have melted down and no longer hold their round shape, about three minutes.

Meanwhile, again, chop mushrooms. It is not necessary that the mushrooms be of uniform size; different sizes will allow the mushrooms to achieve varying textures, which is ideal. Add mushrooms and rosemary to pan, stirring to coat in fat. Allow to sweat, but do not salt the mushrooms. It will take about five minutes, with occasional stirring, but the mushrooms will release their liquid and it will be awesome.

Once mushrooms have sweat and wilted, about five minutes, sprinkle flour over top of the mushrooms and mix until flour disappears. Add wine, soy sauce, mustard, Worcestershire sauce, pepper, and nutmeg. Reduce heat to medium and allow to thicken slightly, two to three more minutes. Stir in parsley and cream, and taste, adjusting seasonings as needed.

Remove mushrooms from heat and pour into a 1 1/2- to 2-quart casserole dish. Top with mashed potato mixture, spreading to cover completely.

Place in oven and cook for 20 to 25 minutes, until potatoes are golden on top and mushroom sauce is bubbling out from around the sides.

Serve hot from the oven. If you have leftovers, this dish is even better the second day, when the flavours, especially the rosemary, garlic, and pepper steep and meld together. Nick can’t wait for lunch tomorrow, and I am looking forward to the smell of this scenting my office. Yum!

Chard risotto with a soupçon of whining.

All the cool kids on the Food Internet are writing about cucumbers and zucchini today, but I’m all out of cucurbits and also incredibly uncool. Today we had chard – it’s been sitting in a vase beside a window for the past two days, getting brighter, bushier, more lovely. The trouble with buying produce at markets along my bus route home is that I have to carry the produce home on the bus where it inevitably wilts. A little bit of care and water upon arriving home does wonders, and in the meantime chard makes a very pretty centrepiece.

We had risotto, because today was unpleasant. The cat woke me up with claws, and I zoned out in the shower and forgot to shave my legs. I broke my favourite gold sandals around lunchtime and had to wander around the office shoeless, consummate professional that I always am, and then I noticed my hair had fallen apart after the fan behind my head flung everything into wild disarray and the concealer I’d dabbed on my monster pimple that morning had worn off and my mascara was running, so I looked just awesome – incredibly stable. You know you look special when everyone who comes to your office opens with “are you okay?”

I had to take the bus home wearing near-non-existent footwear, and quit on my “shoes” at my stop and walked home barefoot along a busy city street and I might have caught foot syphilis. These are first-world problems, but incredibly dramatic when one is focused entirely on herself.

So we ate comfort food, with my beautiful red chard, and Nick bought beer and pretended like I was a rational human being, and now everything is almost better. Thanks, risotto. Wine and cheese have never not helped me yet.

Chard risotto

(Serves four as a side-dish, two as a main course. Is easily multiplied.)

  • 3 to 4 cups chicken or vegetable stock
  • 2 tbsp. olive oil
  • 2 tbsp. butter, divided
  • 1 medium onion, chopped
  • 5 cloves garlic, chopped
  • 1 lb. chard (about one bunch), stalks and leaves chopped separately
  • 1 cup arborio rice
  • 3/4 cup dry red wine
  • 1 tsp. white pepper
  • 1/4 tsp. nutmeg
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp. chopped fresh basil, divided
  • Salt to taste, if needed

Heat stock until boiling, then reduce heat and maintain a gentle simmer.

In a heavy-bottomed pan over medium-high heat, heat oil and melt the first tablespoon of butter. Add onions, garlic, and the chopped chard stalks and cook for two to three minutes, until onions are translucent. Add rice to pan, stirring for about a minute, or until rice grains turn opaque.

Add leaves. It will look like your ratio of rice to greens is off. It will look this way for a long time, but it’ll all work itself out. Pour in wine, and scrape the bottom of the pan to ensure nothing has stuck. Add pepper and nutmeg. Cook until wine has been completely absorbed.

Add one cup of the warm chicken stock, stirring frequently until liquid is mostly absorbed. Repeat with an additional cup of stock, and then repeat again with one to two more cups as needed. Test your rice for tenderness – if it is al denté, great. If it isn’t, just pour in a little bit more stock, as needed, and let it absorb into the rice.

When rice is ready, stir in butter, Parmesan cheese, and one tablespoon of the basil. Adjust your seasonings, to taste. Serve hot, with additional Parmesan cheese and a light sprinkling of chopped fresh basil. The whole process takes about 30 minutes, but believe me, the stirring and the smells are therapeutic. Plus, who opens a bottle of wine to cook with and doesn’t dip in? Try 30 minutes of cooking with the bottle all to yourself, and tell me you don’t feel better about everything, even if you were fine to begin with.

On the topic of picnics.

I meant to tell you about picnics last night, but somewhere in the hours between the time I dropped Grace off at home and then slumped into bed, I ate something mildly poisonous that left me almost certain I would die there on the bathroom floor, cat licking my face and who-knows-what stuck to it. I seem to have survived, which is kind of nice, so I took the day off because I still don’t feel or look particularly pleasant. I’m a little leery of the way the cat seems so intent on having her mouth (and teeth and tongue) on my face, so I will stay conscious as long as possible, and tell you about picnics today instead.

I had two picnics in four days last week, the first last Thursday at English Bay with take-out fish and chips, and the second yesterday, at a park beside Westham Island, with pink wine and everything you could possibly think of to eat.

I think that picnicking is what people are talking about when they’re trying to convince me that camping is fun. But how wonderful it is when you take it away from tents and the terror of being eaten by bears or mountain lions! A picnic is officially the most civilized thing you can do outdoors.

And never mind that on Thursday I was devastated at the tarragon that afflicted my tartar sauce (it tasted like potpourri), or that we’d opted to drive instead of bike and almost missed the last half-hour of Raincity Grill’s take-out operations. One of the intrinsic lessons of picnicking is that it doesn’t always go according to plan, which is something some of us need to become a lot more comfortable with. Funny how a spot of sunshine and a view of sparkles on the water can make even the worst tartar sauce, mislaid plan, or oversight be taken in stride.

Sunday’s effort was more coordinated, and full of flavour and style in a manner that is distinctly Grace’s. We sat on an elevated pier beside the water, watching birds and boats and feeling a little smug when another group of picnickers arrived, Tim Hortons’ sandwiches and bottled water in hand. While spontaneous take-out picnics can be fun, nothing trumps a fabulous spread paired beautifully with Spanish rosé and served on proper dishes.

I now know that food eaten in fresh air and above the water-level tastes better, and that sunshine does life-changing things to cold wine. These are important lessons, also intrinsic to picnicking, and how sad would it be to never have learned them? Of course, taking my word for it is cheating, and you must go out and discover (or rediscover) these facts for yourself.

There is no reason not to. You’ll need to prepare a bit ahead of time, unless you know of a good take-out window near the beach, and you’ll need an hour and a spot to sit on. Everything else is at your discretion, though I recommend Francis Lam’s ginger-scallion sauce on cold poached chicken, Smitten Kitchen’s mango slaw, some buns to pile both onto, and a selection of other treats – pickles, salads, watermelon (don’t forget the salt), baked goods – and, obviously, wine.

You can do this alone, but it’s better with friends. Four hours and optional napping is better than one hour, and more wine is better than none, but it’s like starting with the world’s easiest recipe and over time making it your own. My personal goal is to perfect the art of picnicking before the end of summer, which means at least seven more picnics (one for each remaining summer weekend), likely more.

It would be best if perfecting the art of picnicking was a group effort. Perhaps we should all go together?

Good olive oil, run-on sentences, and bread soup.

I have long felt hard done by for the lack of a large Italian grandmother in my life. My grandmothers have all been quite fantastic, of course, but we’re so Canadian that one not-too-distant relative was mentioned briefly in a Farley Mowat book, which I am pretty sure is the Canadian equivalent of boasting ancestors arriving on the Mayflower. Which is not to say that Canadian is a milquetoast heritage – it’s got more than its share of culinary ooh-la-la, and not just what Americans call Canadian Bacon (which is actually just ham). But what it doesn’t have is olive oil.

You know where does have fantastic olive oil, though? San Francisco. So maybe an Italian grandmother is not entirely what I need – maybe I need an American BFF instead.

Years ago I discovered the good olive oil, and it comes from a shop in the Ferry Building on the Embarcadero. It’s made from organically grown California olives, and I would do some very morally questionable things to have access to a lifetime’s supply. Unfortunately, they don’t ship to Canada. It’s like being in love with someone who doesn’t return your calls.

So when we went back recently, I had but two orders of business: get myself to City Lights Bookstore which is the kind of place I nearly fall down weeping at the entrance to which means that I chose the right major in spite of the long-term earning potential I sacrificed; and, get to the Ferry Building for the good olive oil. I misjudged the distance from Fisherman’s Warf to our oily destination, causing my party of five to have to hike nearly thirty minutes in bad footwear, but it was totally worth it. For me.

What I love about the good olive oil – Stonehouse Olive Oil, if you’re too lazy or captivated by my elegant prose to click the link above – is that it tastes how I imagine fresh olive oil in Italy would. They sell each batch the same year it’s harvested, so it’s as fresh as you can get without actually sticking your face under the olive press.

Oh, San Francisco – what scandalous, depraved, excellent things I would do to be able to live with you forever.

Anyway, I got the oil, and I’m hoarding it. Except I used some tonight, a good amount of it for someone who is unsure when they’ll be back to the States to get more. We had soup – an enormous pot of it, because it’s the week before payday and we’re just back from vacation and OMG-broke, like, so much so that I jammed the vending machine at work with foreign money this morning trying to get an orange juice. I make big pots of soup when I’d prefer to stretch a meal into three to avoid starvation, and this, made of pantry staples, will take us handsomely through lunch and all the way to dinner tomorrow. For regular households, that means eight to ten servings. It’s easily adapted to smaller feedlots, however, so fiddle with it until it’s to your liking.

Bread Soup

(Serves 8 to 10.)

  • 1/4 cup good olive oil (I don’t believe I ever specify extra-virgin, but it’s what I mean by good olive oil)
  • 5 cloves garlic, roughly chopped
  • 1/2 lb. stale bread, cubed and toasted (about four thick slices)
  • 2 28 oz. cans whole tomatoes, plus juice
  • 1/2 cup red wine
  • 4 cups vegetable or chicken stock
  • 1 19 oz. can cannelini or white kidney beans
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped fresh parsley (flat-leaf is better, but the curly stuff is okay if that’s all you can get)
  • 1 tbsp. lemon zest
  • As much pepper as you feel you need

In a large pot over medium-high heat, warm olive oil. When olive oil is hot, add garlic, and sauté until fragrant and lightly golden, about two minutes.

Meanwhile, whizz bread cubes in a food processor or blender until you end up with coarse crumbs. You don’t want to grind the bread too finely, or you will end up with a soup with boring texture, and no one wants that.

Add bread crumbs to the oil, and stir to coat. Immediately begin squishing tomatoes into the mix, adding juice quickly and scraping the bottom of the pot to ensure nothing burns to it. Add the wine. Stir again. Add the broth.

Reduce heat to medium, and simmer, uncovered, for 30 minutes.

After a half-hour, add beans, cheese, parsley, lemon zest, and pepper. Simmer an additional five minutes, until parsley has wilted and the whole thing smells magnificent.

If it’s a dark and stormy night and the water runs down the window so fast your cat can’t keep up with the drops, serve piping hot, with a swirl of your favourite olive oil, a lemon wedge, and a fat hunk of crusty fresh bread. And wine. Red wine. If it’s not, this is pretty nice chilled, like a hearty gazpacho, but serve with a charming white wine, a Pinot Grigio or a Sauvignon Blanc instead.

It’s delicious on the first round, like a bread and bean stew, but even better the second day. The hallmark of a quality meal, if you ask me and my imaginary Italian grandmother.

Lobster and sake: So this is February?

I wanted to show you something today, but I decided against it. I have a recipe I am working on, and I thought it was perfect, but the more I nibble, the more I think it could use another round and some new ingredients. So instead, I am going to show you what I did and drank today.

Those daffodils? They appeared in a garden outside one of the buildings on our block. It’s marvelous out, really fantastic, and spring has sprung, more than a month ahead of schedule.

We hopped on our bikes this morning, without our jackets, and we rode around in the sunshine, and ended up at Granville Island, which is a place I love very much, with its markets and fish mongers and wonderful places to buy beer, wine, and sake. It also doubles as a tourist destination, which is something I forgot about today, as it was crazy there, crammed full of Olympics-related festivities.

We bumbled around the market, eating free samples and soaking in sunshine, and happened upon The Lobster Man, where they were barbecuing lobsters, oysters, and other fishy things. We grabbed ourselves some lobster roll, and looked at all the delicious seafood swimming in its tanks.

We stopped in at all the usual places, and then detoured onto Railspur Alley, where there is an artisan sake maker who will let you sip from his whole collection for five dollars. Not small sips either – we were both slightly buzzed as we stumbled around the rest of the island afterward.

The sake is delicious, all of it, and quite worthy of the praise heaped on it by local media. We tried all three standard flavours, as well as the sparkling sake, which was so lovely I’m considering switching it in for regular sparkling wine come New Year’s eve. It was cold, and bright tasting, dry on the tongue but lively and slightly fruity, like sake but also like something else, though I’m not sure what. I wanted to take everything they had home with me, but I was on my bike, and had forgotten a bag.

It was a good day, and while I have no recipe this afternoon, I promise I will have one for you soon. I’ve been hoarding the good tuna, so I’ll have at least a spin on tonnato sauce to share, and maybe a fancypants but inexpensive tuna melt. Maybe. Or maybe something else! When it’s like this out, it’s hard to know where the mood will take us. Wheee!

Leek and bacon barlotto.

I’m. So. Tired.

We went to Las Vegas this past weekend, for the very first time, and it was wonderful. We ate nothing but meat and drank nothing but beer and Bloody Marys for three days, and though our bodies are suffering, our minds are at peace, the stress of our daily lives forgotten as we pissed away our American dollars and gorged ourselves at the meat buffets.

The hard part is getting back to our lives as usual. Early bedtimes and dinners with vegetables are the order of the week. Tonight was grain night, and half of a one-dollar bag of barley formed the basis for dinner.

The following recipe makes enough for four to six as a side dish, or two to three as a main. It will double very easily. We ate it as a main, topped with a poached egg, and there was a bit left over. It’s a hearty alternative to risotto, as barley is a whole grain rich in both soluble and insoluble fibre, which means that it’s a great way to recover from a vacation in which you ate nothing good for you.

Leek and bacon barlotto

  • 2 to 3 slices thick-cut bacon, chopped
  • 1 cup chopped leek (one medium leek, white and light-green part only, cut into sixths lengthwise and chopped)
  • 1 tbsp. olive oil
  • 1 cup pearl barley
  • 2 or 3 cloves garlic, minced
  • 1/4 cup dry white wine
  • 3 to 4 cups warmed chicken stock
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp. butter
  • Salt and pepper, to taste

In a large, heavy-bottomed pan, sauté bacon until crisp. About one minute before the bacon is ready, add the leeks, and sauté until glistening. Remove from heat and drain onto a plate lined with paper towel.

Drain the bacon fat, but don’t wipe the pan. Add olive oil. Return the pan to the stove, set to medium-high heat, and pour in barley. Stir fry barley and garlic until golden and toasted, about two minutes. The barley will smell toasty and will turn white before it browns slightly. Stir in the wine, and reduce to medium heat.

Once wine is absorbed, pour in one cup of stock. Stir frequently until stock is absorbed. Repeat two to three more times, over thirty to forty-five minutes, until barley has puffed and softened; you will want the texture to resemble al denté rice, slightly chewy but pleasing to the bite.

Once almost all of the liquid is absorbed, add bacon and leeks back to the pan, and cook with the barley. You’ll want the liquid to have almost completely disappeared. Once this happens, remove from heat.

Stir in butter and Parmesan cheese. Season to taste.

Serve with crusty bread, with more fresh-grated Parmesan cheese, possibly topped with a poached egg.

This is salty, cheesy, nutty, and thoroughly delicious, with just the right amount of chew and softness to make it the perfect comfort food to follow a weekend of gluttony, or just a hard, long week.
