Bulgur risotto, with lima beans or peas or whatever you’ve got in your pantry, freezer, or fridge.

Oh, did I mention we’re moving? We’re moving. In eleven days.

We’ve found a place, about a five-minute bike-ride away from where we are now, in a nice little neighbourhood where there’s a grocery store so fancy that there are two cheese sections, one that’s open to the general populace and one behind glass, which people like me can’t afford to buy from. They sell interesting things like San Marzano tomatoes, squid ink pasta, jasmine tea soda, and beautifully aged dark red meat. There’s a Williams-Sonoma across the street.

The apartment is also very nice, though there isn’t a balcony so the barbecue won’t be coming along. It’s cheaper than where we are now, and a little bit bigger, and we can have a dog or a cat there if we want. I want. Nick is being difficult. The kitchen there is smaller, but there are more windows, and so maybe my photographs will come out clearer, less blurry, and maybe less yellow and dark. There is a separate space for a dining room. There are closets.

I am very excited. But we have so much stuff, and the kitchen here is full-to-bursting. So we’re not buying anything new, not until the new place is unpacked and set up and we’ve determined how much of my clutter will have to be stored. And that is why today, I want to tell you about risotto.

Kind of.

Bulgur risotto.

Which I guess isn’t really risotto at all.

We’re using up the stuff in the cupboards, and a year or so back, I was on a bulgur kick, because it’s such nutty, chewy stuff and I wanted to make Turkish food and it’s something other than pasta or rice. It’s toasted cracked wheat, which sounds just lovely, and you can use it in place of rice in pretty much anything. You can even make a kind of risotto out of it, and it’s wonderful, especially if you live with someone who loathes risotto.

You make it the same way that you’d make a real risotto, though you use less liquid, it takes twenty minutes instead of thirty, and you don’t have to pay as much attention to it. It’s not as creamy as risotto, but you can make up for that by adding vegetable puree, perhaps, or an extra creamy cheese. If you want. I used lima beans because I had some in the freezer, but Nick thought this would be much better with peas. Who knows? Give it a try. Play with it, and tell me what you think.

Bulgur Risotto with Lima Beans

(Serves four to six as a side dish, or two very hungry people as a main.)

  • 2 tbsp. butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup coarse bulgur
  • 2 cups hot chicken stock
  • 1/4 cup dry white wine
  • 1 cup frozen lima beans (or peas)
  • 1/2 cup grated parmesan cheese
  • 1/2 cup chopped fresh parsley
  • Salt and pepper, to taste (but taste first!)

Melt butter in a heavy-bottomed pan on the stove. Add onions and garlic, and coat with butter, frying until the onions are translucent. Stir in bulgur, and allow it to sop up any of the remaining butter.

Pour in about half a cup of chicken stock, stir, and let absorb. Keep adding chicken stock in small doses, for about fifteen minutes.

When the last of the chicken stock is absorbed, and the bulgur has puffed up and softened, finish with the wine. Throw in the frozen lima beans, and the parsley. Toss with cheese, and adjust seasonings to your liking. I didn’t add any salt, because the cheese and the stock was salty enough, but Nick said it wouldn’t hurt to add a tiny bit more.

Serve on its own, or as a side dish. It’s very unusual, with a texture reminiscent of wild rice and a nutty, toasty taste. It’s very good, and quite filling – very high in fibre, you know. And it’s a nice change, if you’re eating a lot of rice or pasta. And not scary at all – bulgur is an easy place to start if you’re looking to expand your eating horizons. I even add a handful of it to regular risotto sometimes, for texture’s sake, and it’s quite good.

Anyway. It’s Nick’s birthday, and I promised I’d let him sleep, but I also said I’d treat him to some breakfast. I should go figure out what there is in the fridge and maybe whip up some eggs or something. And then start packing.

This is not a post about turkey, because I’m not talking about leftovers yet.

It’s been another busy busy weekend, and we’re just at the end of it now. If you’re not Canadian, you probably didn’t do Thanksgiving this weekend, but up here, we celebrate in October. I don’t quite know why, because I had my head on my desk for much of Canadian history, because there is only so much one can hear about fur traders, and a certain amount less is all that can be absorbed by the brain and then retained. And I wanted to tell you what you should do with all that leftover turkey, but, to be honest? It can wait a day. Too much turkey all at once is why no one eats turkey at all the whole rest of the year. So leave the leftovers for now. We can talk about them tomorrow, or even the next day – they’ll still be there.

So instead of making turkey hash, sandwiches, curries, and soup, make fettuccine. With bacon and garlic. And since we’re very near first frost, gobble up the last of those heirloom tomatoes – they won’t be on the grocery shelves long. I inherited a five-pound bag of green tomatoes from my mom this weekend, and I’ve got big plans for them – I’ll tell you all about green tomato soup this week, I promise, and you’ll love it. But in the meantime, the red ones (and the yellow and orange and pink and striped ones) will be gone soon, and you must enjoy them while they last.

Tomatoes: The last of the fresh red ones for the season.Slice your tomatoes, and drizzle them with a little bit of good olive oil, a bit of your favourite vinegar, some chopped herbs, whatever kind, and a bit of cheese. And then set it aside, because in eleven minutes the rest of the feast will be ready.

You’ve probably been cooking all weekend, or at the very least doing a lot of things this weekend that took up a lot of your time, so pick up a package of fresh pasta. Dried pasta will work fine too, but dinner won’t be ready for sixteen minutes then, and you’ll want that extra five minutes for sitting and sipping wine and enjoying the quiet. You’ll be hovering over the stove souping up those leftovers soon enough.

Fettuccine Kind-of-Alfredo

  • 1 package fresh fettuccine noodles (350g or 3/4 lb.)
  • 3 strips of bacon, chopped into 1/4-inch pieces
  • 1 tbsp. butter
  • 2 large cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup grated aged Gouda (or other hard aged cheese)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped fresh parsley
  • Salt and pepper, to taste

While your pasta water is on its way to boiling, fry up your slices of bacon over medium-high heat.

When they are crisp and brown, reduce to medium, and add the butter and the garlic. About this time, the water should be boiling – dump in your pasta, and boil for three minutes. Right before the pasta is done, add the cream to your buttery garlicky bacon, and let simmer until the pasta is to your liking.

Dump the pasta into the frying pan, and then add the cheeses. I find that tongs are most useful for mixing this all together – you want the cheese to be melty but not sticky, and you don’t want the noodles to feel dry. If this has happened, add more cream. Nothing bad ever happens if you add a little bit more cream.

Once coated, toss with fresh parsley, and salt and pepper to taste. Serve hot, with a side of sliced tomatoes, and revel in the easiness of this. This weekend marks the beginning of the eating season, which often means a lot of large, complicated meals that, while delicious, are an awful lot of work. There’s a lot to be said for lazy, hearty pasta dishes during this time of year – they’re like lulls, and you should certainly enjoy them (with wine).

The long shot.Busy week though last one was, I hope to be able to tell you about a lot of lovely things this week. It may be soup week, because I’ve got a bit of zucchini and onion that’s itching to be made into this spicy Korean thing that will surely kill any cold that threatens you, and that green tomato business that I mentioned before. And the stew. You want a showstopper stew that’s not actually all that much work but tastes like you slow-cooked it for two days? Got it, in a pumpkin. And maybe something with turkey, though there’s a lot to be said for freezing the leftovers for a week or two. Or three. Maybe I’ll haul it out to celebrate American Thanksgiving in a month or so. It’ll be about time for it again then, yes? I think that sounds about right. But I’ll let you know if anything changes. And in the meantime, Happy Thanksgiving!

I pretty much just like saying “Wellington.”

I mentioned something the other week about my life exploding. It does that, from time to time, and I’m not sure if it’s an outward explosion as much as it is the disaster in my own head leaking out like biowaste, but the long and the short of it is that I am terrible with money. Just awful. I have bills, but in the past I have moved often and forgotten to reroute my mail or forgot I had certain bills, only to remember them six, eight, ten months later when the shit has not only hit the fan but spattered and slapped me awake at midnight on a work night and when that happens I can’t sleep and start filling out Expressions of Interest online in the hope that I’ll qualify for a move to New Zealand.

I do. Qualify, that is. As a “skilled migrant,” imagine that!

I paid off my last credit card last week. Paid it off in full. The cards are gone, chopped to bits, and that chapter in my financial saga has closed. That chapter, but not the one where I owe the government for that education it funded and now wants me to pay for. It’s an unnerving thing to realize that your moderate success in paying off an aggressive strain of debt is worth only minor celebration, because there’s this other bill that you haven’t been paying attention to, and you don’t know what’s going to come of it.

I have an appointment on Saturday to talk about debt consolidation and being a responsible adult. And, it’s almost midnight, and I can’t help but log in to my account with Immigration New Zealand and look at my in-progress application and sigh. Running away isn’t going to solve anything, is it?

This thing is dogging me in my real life, and the stress of this and work and finding a new apartment is making me quite insufferable. I’m cranky at work. I’m fussy at home. I ruined the polenta yesterday. And I scraped the seeds out of a very hot pepper this evening, using my thumbnail, and every time I habitually pick at my bottom lip, I feel burning and then I tongue it and then my tongue burns too.

It’s at times like these when comfort food is oh-so-necessary. I love meatloaf. I also like the way the word “Wellington” sounds and feels to say. And it’s coldish out now – long sleeves and leggings weather. Sweaters and jeans weather, almost.

You’re probably a million times more responsible than I am, and surely your life never explodes. Hopefully yours doesn’t keep you up at night. But I am certain that at some point this winter, you are going to want to be cuddled, and if your version of Nick is also addicted to oppressively loud and rather gruesome first-person shooter games, you’re going to have to find love in food.

Fortunately, meatloaf wellington will love you right back. And it never charges.

Make the meatloaf the day before you want to make this. It will be a bijillion times better, though make sure it’s at room temperature before you wellington the thing. The meatloaf part of the recipe has been adapted from Fannie Farmer, though I’ve made it so many times that it’s morphed some, and is now an improved version. Not as good for you as Fannie’s, but I don’t think you visit here for your health.

Meatloaf Wellington

  • 2 cups bread crumbs
  • 1 onion, finely chopped
  • 2 eggs
  • 2 large cloves of garlic, finely minced
  • 1 lb. ground beef (don’t use extra-lean – regular lean will be fine here. For moisture’s sake)
  • 1 lb. ground pork
  • 1/2 cup chopped fresh parsley
  • 2 tbsp. Worcestershire sauce
  • 1 1/2 teaspoons dry mustard
  • 1 1/2 teaspoons salt
  • 1 tsp. dried thyme
  • 1/2 teaspoon freshly ground pepper
  • 1/4 cup melted butter
  • 4 slices of bacon

Preheat your oven to 350°F.

In a large bowl, combine all of your ingredients except the bacon, and mush together with your hands. You want the ingredients to mix together, but you also want the meat to keep a bit of texture.

Press into a greased loaf pan, and top to cover with the four strips of bacon.

Bacon!

Peek-a-boo!I like to make sure there’s no sticking at the bottom of the pan, so I always cover the bottom with a piece of parchment paper.

Bake for 45 minutes, and then pull out of the oven and let cool in the pan. Set aside, preferably overnight. Once again, it should be at room temperature for the next steps, so if you refrigerate the thing overnight, then take it out an hour or so beforehand to take off the chill.

Wellington part:

  • 1 large onion
  • 1 tbsp. butter
  • 1 1/2 tbsp. Dijon or Bavarian mustard
  • 1 large sheet of puff pastry (enough to wrap a meatloaf … if the piece you have isn’t big enough, layer the second piece [there are always two to a package] so that the meatloaf is completely enveloped.)
  • 1 egg, beaten

Slice the onion into very thin strips and caramelize in the butter over medium heat until dark golden. This should take 20 to 30 minutes, and you will periodically need to deglaze the pan with a few tablespoons of water.

On a lightly floured surface, roll out your puff pastry to a size that will suit your meatloaf, and spread with the mustard. When the onions are ready, spread them out over the pastry as well. Be sure to leave plenty of room around the edges for folding and sealing the pastry.

Preheat oven to 425°F.

Place the meatloaf in the centre of the pastry, bacon-side down. Paint the edges of the pastry with a bit of egg, and wrap the pastry around the meatloaf as if you were folding the world’s meatiest present.

Turn over and rest on a baking sheet lined with parchment, seam-side down. Paint the top and sides of the wellington with the egg, sprinkle with salt, if you like, and bake for 15 to 20 minutes, until the pastry is golden and puffed.

Rustic?

Perfection.Serve with gratin potatoes and garlicky mushrooms and the kind of wine that’s tasty but also affordable. You can think about other things, like New Zealand, tomorrow.

Soothing!

The most wonderful little baby eggplants, and I suppose that now it’s actually officially fall.

Much as it’s hard not to mourn the end of summer and its wonderful smells and icy cocktails, it’s impossible not to get excited about fall. In fall, I get to wear my sparkle tights and squeeze my fat noggin into cute little hats and, of course, there are boots. Leather boots, ankle boots, polka-dot galoshes – sartorially, you could even call it my favourite season. Give me a breath of foggy air and a smear of red lipstick over aloe sticky and chaffing thighs any day.

And the eggplants.

And it’s the time of year for soothing things like sweet coconut milky curries, spicy/full-mouth-flavourful and soothing. The right green curry paste is important, and I follow Chez Pim’s recipe for consistent success. I like to make a bunch ahead of time and store it in a jar in the fridge for when I need it, but it’s relatively easy for me to do this – I live in Vancouver, where all of the ingredients are not only plentiful and easy to find, but cheap. That doesn’t mean you can’t make this as well, and I wouldn’t frown at you for buying it. One of the things you should always keep in your fridge is a bit of Thai curry paste – red or green. It’s an easy addition to any weeknight repertoire, and you can buy it in almost any grocery store, in the ethnic food section.

Also, the nice thing about this stuff is that it’s even better the next day, so when you take it to work and reheat it in the office microwave, the smell will make everyone jealous about how awesome your lunch life is.

I’m assuming you’re going to buy the curry paste, because, honestly, life is too short to make it all the time and I linked to Pim’s recipe if you’re keen, but most people have real lives that get in the way of making large batches of this sort of thing. I don’t, of course. But you probably already knew that.

So chop up your eggplants, some ripe bell peppers, and a sweet onion, mince your basil and garlic and ginger, and bask in the smells of somewhere else for a little while. For something so exotic, it sure makes your kitchen smell homey.

Most of the ingredients...

Eggplant green curry

  • 1 tbsp. peanut or canola oil
  • 2 tbsp. minced garlic
  • 2 tbsp. minced ginger
  • 1 tsp. of chili sauce, sriracha, sambal oelek, or Tabasco, or to taste (I always add too much because I likes it)
  • 6 to 8 baby eggplants, quartered, or one large eggplant, cubed
  • 1 large red bell pepper, cut into strips
  • 1 medium sweet onion, such as Walla Walla or Vidalia, cut into strips
  • 1 cup chopped white mushrooms (which I ran out of before I made this … and I missed them)
  • 1 tbsp. green curry paste, or to taste (again, I like it pungent and always use way more)
  • 1 lime, zest and juice
  • 3 cups coconut milk (or two cans, if that’s what you’ve got – no sense in tossing a tiny little bit, right?)
  • Salt and pepper, to taste
  • 3/4 cup chopped fresh basil
  • 1 cup fresh bean sprouts (optional – again, I was out. Boo.)

Heat up the oil in a large pan, and when it’s shimmering-hot, reduce heat to medium-high, and throw in your garlic and ginger, and saute until the garlic and ginger have turned just slightly golden. Add the chilies, onion. and eggplant. Saute until the onions are translucent and the eggplants have browned slightly. Throw in the peppers, curry paste, lime zest and juice, and give it all a minute or two, until the peppers have softened slightly.

The smell is intoxicating, and reminds me of night markets beside the Fraser River and restaurants where you sip lime sodas while you wait in line and glittered tapestry elephants saddled in gold and pink and red.

Add the coconut milk, and simmer for three to five minutes, until the eggplants have soaked up the sweet milkiness and the other vegetables have sufficiently wilted, but not so long that the peppers lose their verve and redness. The eggplants should not cook so long that they are brown and grey and smooshy. A bit of white flesh means that they are still firm. Texture = good. Season to taste – I sometimes add more curry paste at this point. Stir in half of the basil before serving, and pour over rice.

Curry pot.

Sprinkle with remaining basil and bean sprouts. Serve with a sprightly French Gewurtzraminer and slices of fresh lime. Be wearing a sweater, and, like a Thai elephant, maybe a little too much makeup. For a weeknight, anyway.

And now for something completely different. Also? Pork Wellington.

Okay. So. I had an idea today, and bear with me, because this is the first time I’ve ever done this and also I was drunk. Which sounds like an excuse for crime or being in porn. No one’s ever invited me to participate in either.

And I now hate my own cartoonish square face. And my voice.

I taped myself assembling a pork wellington inspired by Laura Calder and something similar she made with beef. I think I also saw Alton Brown make something similar once. Also, the only time I’ve ever been on rolling film I’ve been inebriated, which obviously means I was awesome it wasn’t – and continues to not be – my fault. For whatever. Excuses. Excuses. Excuses.

Anyway, if you hate my face or if my awkwardness makes you horribly uncomfortable or if you can’t hear a word of what I said in the video, let me know, and I’ll either do better next time or hang my head in shame and never cook again.

(I have to preemptively apologize for everything in case you think I take myself seriously, and thus think I’m some sort of douchebag. Neither is the case, I promise. Unless you think I’m a douchebag for using “thus” in a sentence. For that, I have no defense.)

Pork Wellington

  • 1 cup oaked chardonnay
  • 1 tsp. butter
  • 1/2 cup dried cranberries
  • 1 package puff pastry, rolled out (one square, or one sheet if you buy it in rolls)
  • 6 pieces thinly sliced prosciutto
  • 1 tbsp. olive oil
  • 1/2 tsp. dried rosemary
  • 1/2 tsp. dried thyme
  • 1/2 tsp. dried sage
  • 1 pork tenderloin, sliced down the centre
  • 1/2 cup toasted chopped hazelnuts
  • salt and pepper, to taste
  • 1 egg, beaten

Preheat oven to 400°F.

In a small saucepan, simmer cranberries in chardonnay and butter until plump, six to eight minutes. Set aside.

Roll out puff pastry on a floured surface until it’s large enough to completely wrap your pork tenderloin. Drizzle with olive oil (a step I forgot in the video), and then lay out your prosciutto. Sprinkle with herbs.

Place pork tenderloin in the centre. Spread apart, and spoon the winy cranberries into the opening. Add the hazelnuts, press to pack, and then sprinkle with salt and pepper, as much or as little as you’d like.

Paint edges of pastry with beaten egg, and fold over pork. Pat to ensure the thing is sealed, and then place on a parchment-lined baking sheet. Bake for 25 to 30 minutes. I told you you should bake it until it’s 140 degrees, but, in all honesty, I don’t care about the rules and I baked it until it was about 135°F in the centre of the meat. It’s better that way. You won’t die of swine flu or whatever people think happens when your pork tenderloin is a tiny bit pink in the middle.

Let this sit for a few minutes before serving. I made a simple gravy out of some beef stock, a touch of wine, some garlic, rosemary, salt, pepper, cornstarch (to thicken), and mushrooms, and served it all with potatoes. We ate healthily yesterday, so I figure this meal makes up for it. Very simple, earthy, and an excellent start to fall.

Porkstravaganza.

The best tomato sauce you’ve ever tasted. For real. I’m not even exaggerating. Yes!

Love.I bought the tomatoes because they were lovely, but also because I was super-excited at the possibilities for solar tomato sauce. A fascinating idea, I thought, and what a way to have dinner ready in a hurry, just boil some pasta et voila! And then the sky turned grey for the first time in a long, long time and the heat wave broke and the long-range forecast whined rain for the next seven days and I still had the tomatoes, and then Rose at work brought me a bouquet of basil. And then everything was glorious.

Basil from Rose.So, inspired in part by a recipe in this month’s Gourmet and in part by an unsatisfied desire to get to the essence of tomatoes through a batch of solar sauce, I’ve improvised some. And it worked out well. Very well. You will soon find an abundance of little tomatoes at your local market, and this is what you should do with some of them. About 1.5 pounds of them.

(If you’re like me, you’ll want a meatball or two to go along with things. Use this recipe. Add a little bit of spinach and lemon zest. Make the peperonata another time, and eat it cold with crusty bread.)

Make this in a pot you can use on the stove AND in the oven. It works better that way, and is less mess. Also, while I insist you try this with little tomatoes, you don’t have to. I was just lazy and didn’t want to bother with the whole blanching/skinning thing, which I kind of feel obligated to do when the tomatoes are bigger.

Tomato sauce that tastes like tomatoes

  • 1.5 to 2 lbs. fresh cherry tomatoes (or other small tomatoes)
  • 1 bulb of garlic
  • 1/4 cup good olive oil
  • 2 tsp. salt (or to taste)
  • 2 tsp. red chili flakes

Preheat your oven to 400°F.

Halve your little tomatoes, and trim the top off the bulb of garlic. Place your tomatoes in the pot, with the garlic right smack in the middle, and then drizzle the oil over top. Add a teaspoon of the salt, and toss into the oven, where you will bake the whole thing, covered, for thirty minutes.

Lusty.Place the pot on the stove, over medium to medium-low heat. You don’t need the thing to reach a rolling boil. Remove the garlic, and squish the cloves out into the pot. You may want to wait until it’s cool enough to handle – I used a clean dish cloth as a barrier against the heat. The cloves should pop out easily.

At this point, you are going to want to puree the contents of your pot. I recommend using a hand blender, because that’s the best way to keep a bit of texture – you could also use a food mill, a food processor, or a blender. If you’ve removed the mix from the pot to blend, return it to the pot. Taste, add the remainder of the salt and any more if you feel it needs it, and your pepper flakes, and simmer over medium to medium-low heat for another 30 to 40 minutes.

Sauce.Boil a pot of pasta (about one pound uncooked) until cooked to your liking, and then toss the noodles into the sauce pot and make sure every noodley strand is covered in fantastic tomatoey goodness.

Sauced.Serve with chopped fresh basil, a dollop of ricotta, and/or your favourite shaved parmesan cheese. And meatballs. But you knew that.

Mmmm. Mmm!I am completely in love with this tomato sauce, because it tastes exactly like tomatoes, which, especially at this time of year, taste exactly like meaty summer sun, to me. And the garlic adds a nice bit of body, and is not aggressive. The roasting and simmering makes it sweet, so that it plays a supporting role here, heightening the taste of the tomatoes. It’s really very lovely. Go out and make this. Especially if it’s raining – the smell … the smell! The wafting, beautiful aromas of this sauce will make your home smell like all the best parts of your garden, roasting. It’s compliment sauce. As in, everyone who eats this will compliment you on your awesome talent and probably also your incredible good looks, and you will taste it and fall in love with yourself all over again. Sigh!

This kind of reminds me of the Flying Spaghetti Monster, in a good way.

Moussaka is not a character from the Lion King.

I returned home from Winnipeg to find a clean kitchen and an empty fridge, and a sky full of dark clouds ominous with the threat of rain. It felt like an appropriate time for some comfort food, for the both of us. After too many days of fast food, we both craved vegetables and a meal prepared at home.

And while I was in Winnipeg, I thought about moussaka, though I am not sure why. I don’t really care for much of what I’ve tasted of Greek food – maybe it’s because almost every restaurant is identical out here, and I don’t really like oregano or whatever is done to the rice or that particular colour blue.

I fantasize about Greece, however, and imagine that the food there is fantastic – not like every Taverna along Broadway or on every corner in every small town in the world. I imagine lemons and fresh herbs and sea salt and perfectly roasted lamb and big, fat, meaty olives. Everything with the sheen of fresh olive oil.

So we invited over Steve and Sooin, and Paul, who gets me in Nick’s will if Nick dies, and served up a hot pan of moussaka. And it was good. Except that it was a tad too salty, so I’ve tweaked this recipe some. It’s much better now.

Moussaka

  • 1 Japanese eggplant
  • 2 medium zucchini So you can see what size vegetables you'll be working with.

Meaty filling:

  • 2 tbsp. olive oil
  • 1 medium onion, chopped (about 1 1/2 cups)
  • 1 lb. ground beef or lamb
  • 3 cloves garlic, chopped
  • 1 tsp. dried oregano
  • 1 tsp. black pepper
  • 1/2 tsp. dried thyme
  • 1/2 tsp. cinnamon
  • 1 small (5 1/2 oz.) can of tomato paste
  • 1/2 cup dry white wine or chicken stock

White sauce:

  • 2 tbsp. butter
  • 3 tbsp. flour
  • 1 1/2 cup milk
  • 2 cloves garlic, finely minced
  • zest of 1/2 lemon (or about 1 teaspoon)
  • 1/2 tsp. pepper
  • 1/4 tsp. nutmeg
  • 1/3 cup crumbled feta

Topping:

  • 1 cup bread crumbs (preferably panko)
  • 1 cup crumbled feta
  • 1 finely minced clove of garlic
  • 2 tbsp. chopped fresh parsley
  • Juice of 1 lemon
  • 2 tbsp. olive oil

Preheat your oven to 375°F.

Thinly slice your eggplant and zucchini, about 1/4 inch thick. Grease an 9″x13″ pan with olive oil.

In a large skillet, sauté your onions until translucent. Add the ground beef and garlic, and cook until browned. Add your oregano, pepper, thyme, and cinnamon, and tomato paste, and wine or chicken stock, stir until everything’s all mixed together and it smells really good, and then remove from heat.

In a small pot over medium-high heat, melt your butter. Let it get foamy, then add the flour, and stir to blend.

Whisk in your milk, and reduce heat to medium. Add your pepper and nutmeg, garlic, lemon zest (not too much!), and stir in the feta. Let this simmer until the feta has melted and the sauce has thickened, three to five minutes. Remove from heat.

Line the bottom of your prepared pan with slices of zucchini and eggplant, not too thick, but until you can’t see the bottom.

Pan with first layer.Drizzle the layer with olive oil, and then add half of the meat mixture over the top, spreading to cover. Drizzle this with about 1/3 of the white sauce. Repeat, adding another layer in this order.

Add the final layer of zucchini and eggplant (there will be three layers of vegetables in total). Drizzle your remaining white sauce over the top layer.

In a small bowl, mix up the panko (or regular bread crumbs), parsley, garlic, and feta. Top the moussaka with the crumb topping, and then drizzle with olive oil, and the juice of the lemon.

Bake for 30 to 35 minutes, or until the top is golden brown and you see bubbling along the sides.

Moussaka!Serve with a salad of cucumber and tomato, tossed with parsley and fresh mint, and topped with olive oil, balsamic vinegar, and salt and pepper.

Meal!And bask in the joy of vegetables, even if you are wondering where summer went. It’s still raining, so tonight we are going to eat as if we are elsewhere, like India. Or Mexico. Or both?

Sweet potato gnocchi: Just because you’re broke doesn’t mean you have to eat poverty food.

When I called this thing “well fed, flat broke,” it was because payday was looming on the not-too-distant horizon and we had no money, but the quality of our meals did not suffer. And I thought it was appropriate, because even on nights when we literally have nothing left to show for all our hard work, we still manage to eat fantastically well.

This is in part due to my compulsive tendency to hoard when times are good – we always have a fridge full of basics that can be spun into something you’d want to eat. I think it’s also because our cute little existences would end in very clumsy suicide if we had to come home to Kraft Dinner and wieners every night once the cable’s been cut off (it has) and our astronomical debt rears its ugly head (it continues to). I cook because we love to eat, and because we don’t care to be reminded all the time about how many ways we suck (so stop calling, Canada Student Loans). A good meal makes us feel better, like regular people who are good at life and who manage to live on what they earn. A crappy meal reminds us that we are little more than 26- and 27-year-old children playing grown-up. So we are well fed.

And, today, we are flat broke.

But I have basil in the fridge, and sundried tomatoes, and sweet potatoes, and I felt like dining in a spot of sunshine and pretending I was anywhere else, and preferably somewhere where sand in my bathing suit would be my biggest worry at any given time. It’s very easy to indulge those fantasies – all you need is a little bit of preparation.

Oh! Before I get started, I wanted to show you what I mean by “two medium sweet potatoes.” I find that the size of vegetables is very subjective and varies from place to place and depends on what time of year it is.

Sweet potato gnocchi

  • 2 medium sweet potatoes, baked (bake in a 400°F oven for one hour – cool completely before working with these … I recommend doing this the night before)
  • 2 1/2 cups flour (plus additional flour for kneading – the amount will depend on how much moisture is in your sweet potatoes)
  • 1 egg
  • 1 tbsp. orange zest
  • 1/2 tsp. nutmeg
  • 1/2 tsp. white pepper
  • 1 tsp. salt

In a large bowl, mash your sweet potatoes. Add the flour, the egg, the orange zest, and the nutmeg, white pepper, and salt.

Ingredients.Mix these together until the whole thing forms a dough. It will be a very soft dough, which means that you will need to work a bit more flour into it. As mentioned, this amount is variable, and depends on how wet your potatoes are – I needed an additional cup, plus some to keep the gnocchi from sticking together once formed.

Once a dough is formed, divide it into six chunks of about equal size. I saved one, and threw the rest into the fridge to keep them cool while I worked. Roll the chunk out into a long dough snake. (Official term.) I rolled mine until it was about a half-inch in diameter. Then, cut the dough into small pieces, about half to three-quarters of an inch. If you know how to roll the gnocchi with a fork to make it look nice, go for it. If you’re like me and you just mangle the shit out of it, then you can call the little pieces done. Put them on a tray lined with floured parchment while you cut apart the rest of the dough.

Throw these in a pot of boiling water, and then when they rise to the top, they’re done, about seven minutes. You’ll probably end up with more than you can eat, and if that’s the case then you can freeze the uncooked gnocchi for another fun time.

Once cooked, I tossed these in a pan with two tablespoons melted butter, a 1/2 cup of chopped sundried tomatoes, a whole roasted garlic (with the cloves squished out), and a generous smattering of basil (reserve a bit to top the pasta with). I also threw in a handful of parmesan cheese.

Today we were supposed to have pork tenderloin again, something we eat a lot of during the week because it’s so quick and easy. But then yesterday we were at Nick’s sister Sharon’s place, and she handed me a bag of blue cod, because apparently she was the only one at her house who would eat fish tacos so she ended up stuck with a bunch of fish she had no use for. Cue the thirty-year-old man-child giggles over fish tacos, and I end up with a few free fishies and an awesome plan.

A few weeks ago, I stumbled across a jar of grape leaves at the market and got all excited – I was going to make dolmades, which are pretty much just Greek meatballs wrapped in briny leaves. And then I forgot. And then I got fish. So I decided that today was a day for white fish and lemon zest and garlic and basil and just a dribble of olive oil, and pretending that we’re anywhere but here. Odd how the heat here is unbearable, but if I were mostly naked and being slathered in oil on some Mediterrannean shore by someone named Nikolas or whatever Greek men are called, it would be infinitely easier to endure. Here, I suffer the heat and Canadian Nicholas and his ongoing love affair with Game Cube Zelda, which he has played for hours and hours, for days on end. He is less Greek than anyone else alive.

“You’ve never seen a real game binge yet,” he says. He is going to wake up to find that a terrible fate has befallen his thumbs. And I will be all kinds of surprised.

But anyway.

I had grape leaves.

Fish on leaves.I can’t tell you how many leaves you will need, because it depends entirely on the shape and size of your fillet. I needed five, because the grape leaves varied in size. You may need more, or less, but fortunately you get quite a lot in a jar.

I topped the fish, which was not frozen, with a little bit of lemon zest, some chopped garlic (perhaps too much), some fresh chopped basil, and just a taste of olive oil. A little black pepper, but no salt. The grape leaves are salty enough, so salt once you’ve tasted the finished product. You can’t unsalt a thing.

Wrap the fish in the leaves, covering it completely.

Wrapped fishy.Drizzle the packet in oil, both sides. Then place it on the barbecue or in a pan on the stove. Three minutes per side over medium heat should be more than enough – less if you have a very thin piece, more if you are working with a big thick chunk.

I chose asparagus, because I always forget that I’ve bought asparagus and wind up with way too much at any given time. I also made a stuffed tomato salad out of a little chopped tomato innards, some grated cucumber, yogurt, a handful of cooked bulgur (which I have on hand because it makes excellent, filling salads for work lunches), a pinch of fresh garlic, and some mint. Very refreshing, and just enough for a day where the air is still heavy with heat and the clouds have started to roll in and make things muggy.

DinnerIt’s started to cool off though, so tonight I will make muffins. If they go as well as I think they will, I will report back tomorrow. In the meantime, I have to go make fun of a 27-year-old boy who’s imagining himself a trotting, dragon-slaying dork elf. This could happen to you:

Grilled (and then chilled) potato salad, or, “How to Accessorize a Meatfest.”

It’s been oppressive-hot around here, and I have not felt like writing these past few days. We continue to eat, but the act of balancing hot computer on lap has been less than appealing. But then Nick started playing video games for hours on end, so a retreat to the bedroom (to Nick’s non-laptop computer) was in order.

Yesterday was one of those half-naked, stand-by-your-fan kind of days, and though I promised Grace a meatfest, I wasn’t able to deliver it in my apartment. Slow-cooking heats 600 square feet remarkably quickly, and as Canadian Tire was out of big fans, we’re currently operating with just the one. So I made the food, and transported it to Grace’s, who’s apartment was much more temperate.

But one should not make a meal of meat alone. No. I made the ribs that I wrote about before, except that I used pork side ribs this time, and the result was even better. (Also, I noticed that I screwed up typing the recipe for the barbecue sauce, so I’ve now fixed it. Oops. Sorry.) Last week I went to Costco, and confronted by two sets of meat, back ribs and side ribs, side by side, I couldn’t decide what was better. The side ribs worked out well – very meaty. Was pleased. I couldn’t make the full amount, because when I finally got most of these defrosted, the bottom rack was still frozen. Good thing: I don’t have an oven big enough to cook that much meat.

SDC10498Anyway, I decided that we really ought to have a summer salad as well, and maybe something with potatoes – I found some lovely new and purple potatoes at the market that morning. Of course, it was intolerable inside and I certainly did not want to hang out over a pot on the stove, so I decided to grill the potatoes. Every recipe I found for grilled potato salad sounded very good, but it was all for warm potato salad, which was really not appealing. Here is my alternative:

Grilled Potato Salad with Tarragon Aoili

  • 4 cups grilled chopped potatoes
  • 1 cup grilled asparagus, chopped
  • 1 cup grilled green beans, chopped
  • 2 cups whole grape tomatoes
  • 4 slices bacon, chopped

As mentioned, you’ll want your vegetables to be grilled and then chopped. Except for the tomatoes. Keep them fresh and raw for a delightful pop. Once your vegetables come off the grill, allow them to cool for awhile, until you can handle them comfortably. Make sure to parboil your potatoes before grilling: Give them six to eight minutes in boiling water, or until they’re almost done. Fry the bacon. But don’t stand over the stove-top too long.

Aoili:

  • 1 egg
  • 1 clove garlic
  • 1 tsp. dijon mustard
  • zest and juice of one lemon
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 cup olive oil (use good stuff. Or use grapeseed oil. Hell, you could even use canola – it doesn’t matter. Use what you like.)
  • 2 tbsp. fresh tarragon

Blend the egg, garlic, mustard, zest, salt, and pepper in a food processor until the garlic has broken down and is in tiny little pieces that you can’t quite see. Slowly pour in the oil (while the blade is in motion). This will produce mayonnaise, which is awesome. Dribble in the lemon juice, and add the tarragon, continuing to process until the herb has been destroyed and thoroughly integrated.

This will make more aioli than is necessary for the salad, but that’s good news. You can use the rest on vegetables, or spread it on sandwiches. Either way, don’t use it all, and don’t throw it out either.

Toss the veggies and bacon with the dressing, as much or as little as you like, and return it to the fridge for at least an hour before serving. Let those flavours sink in!

The result was a delicious feast that I was pleased to have endured a day of heat to make, all things said and done. Grace made margaritas, and we drank wines. And then Grace produced a rhubarb shortcake with whipped cream that was all sorts of revelatory, and I learned that rosemary and rhubarb are a magical pairing that I would like more of. Possibly every day. Holy crap. I wish there was a photo. And with that, I now must figure out how to feed myself while wearing almost nothing and not turning on the stove, as despite the cloud cover, it’s still very warm. Goodbye, for now.
