This is just a quick little note to say THANK YOU! The book’s official debut came this weekend at the nicest bookstore in town, and though it only just had its official stepping out, the book going to its second printing already. Thank you for buying a copy, and for telling your friends about it!

The launch, somehow both long-awaited and surprisingly quick to get here, was beautiful and wonderful and friends and family from all over the lower mainland and going back to my earliest years were there. There were meatballs and little pancakes and crudites and wine, and I had a dress on that I bought in a store that didn’t even have a clearance rack. It was a special day.

The launch was held at Barbara-Jo’s Books to Cooks, which is one of my favourite bookstores in the world and, if you’re in Vancouver, my top pick for books on cooking and food. Like Omnivore Books in San Francisco, but afterward you can pop into Patisserie Lebeau next door for an excellent chicken salad sandwich and a waffle.

The lead up to the launch was busy as well, and I feel like I’ve been talking about myself for weeks. Indeed, I have: you can hear my interview with Rick Cluff on CBC Radio here, and watch me give the wrong URL for my website on Breakfast Television here. There are more, and I will post those links as they appear.

We’ll be back to recipe posts soon (we’re eating a lot of take-out lately). In the meantime, I just wanted send e-hugs (the only hugs I’m really comfortable with) and my warmest thanks.

 

Understanding about Food Babe.

If you are on the side of facts and reason on the food-related internet, there’s a good chance you saw Gawker’s delightful take-down of Vani Hari, otherwise known as “Food Babe.” The story ate up my whole newsfeed on Facebook almost all day long, and I loved it. I did. I loved it in that way you love things when you are the intended audience for a story and it just lands. Skewers the opposition. Does everything it’s meant to do for the people who will enjoy it the most. Food Babe is ill-informed at best, and dangerous at worst and I am not defending her, exactly. But Food Babe does not exist in a vacuum.

Food Babe is the manifestation of a set of symptoms, like how boils sometimes appear on your body when you’re trying to fight an infection.

I know first-hand how challenging it is to put science garble into plain language. At work, I communicate science and communicate to scientists, and though I am not a scientist myself, I understand the challenges inherent in trying to tell people about scientific discovery. For a story to matter, people have to care.

A scientific breakthrough is most of the time not very sexy. Discovery starts small – someone in some lab somewhere finds something at the cellular level that could have potential implications, maybe in animal models. It must be studied, and those efforts must be repeated and verified, and peer-reviewed, and then if it is in fact a breakthrough, it still has a long way to go, sometimes decades, before it’s applicable to humans.

As a writer, this is the challenge. You want people to read your work. Page views are validation. You want a good hook, a degree of certainty that media is going to take interest in your story and pick it up and maybe do TV interviews with the lead investigator in front of your building. The temptation to throw a little glitter on that press release is always there. Scientists want to see their work in the news. Journalists want a good story. Readers want a good headline, an action item, something to take away to improve their lives and share on social media.

People want to read that something causes or cures cancer. Anytime I read that wine or beer is actually good for you, I don’t check the sources – that shit gets shared. I want it to be true! It has to be true. I love wine so much.

Good science communication resists the sparkly lure of a click-bait headline or a sensational take on basic science. Good science reporting is clear, effective, never misleading, and makes no promises. Good science writing informs an interested public, and benefits the scientists who make the discoveries, the institutions that support their work, and the people for whom these discoveries are relevant (or will be relevant in the future).

Telling science stories is hard, especially online where anyone can find any number of more-interesting opinions and “facts” to inform or reinforce his world-view. TL; DR, and all of that.

Good science communication doesn’t always make us feel good.

Science is uncertain, and doesn’t make sweeping claims. It can’t. It would fizzle and die before it ever got to peer review.

Science is not about our feelings.

A lot of us are afraid. Or hopeful. Or optimistic. We want to believe that if we live the right way, and eat the right things, and exercise the right amount that we won’t get cancer or diabetes or whatever thing we’re most afraid of. Organic kale and local in-season tomatoes are pretty goddamn wonderful. You know what else is amazing? Those blue slushies from the gas station in July when only something blue will do to quench your ravenous thirst.

And you can enjoy all of these things and live to be 100 or be hit by a bus tomorrow, but only eating the kale and the tomatoes is not a salve. It is not protection against the unknown, because there is no such thing. Health and long life are an odds game, and you can get just as lucky drunkenly slapping the table and shouting “HIT ME!” as you can soberly and carefully counting the cards in the deck.

That doesn’t mean you should stuff your face into a bag of Cheesy Gorditas and just hope for the best. I mean, get into those things sometimes, but also have a salad? And some whole grains? Or a bit of broccoli, every now and again, even with cheese sauce? A healthy diet is not a complex equation: Mostly good stuff, a little bad stuff to preserve your sanity, and don’t drink pop every day. Wine is okay but you should verify my claims here because I am blindly clinging to the belief that my liver is totally fine after all it’s been through.

So if a healthy diet and reasonably good nutrition are so straightforward, why does Food Babe exist? Her blog and her books are the results of the worst possible combination of our secretly Googled paranoia, increasing distrust of corporations and the government, decreasing science literacy among the general public, and shitty online fear-mongering.

Food Babe fills an emotional need the way that Dr. Oz does. She makes people feel good, and often on the internet feelings are more important than facts, which are scary and outside our control.

Not being in control is terrifying. Trusting corporations to make decisions that aren’t wholly influenced by money is not a great idea either. So Food Babe’s message is compelling, even if it is largely unfounded. I just can’t imagine living in a world where everything is so toxic and frightening and costs so much.

The urge to want to feel like if we do the right thing, or avoid the right things, nothing is going to hurt is understandable. And “toxins” are a kind of villain, a bad guy we can arm ourselves against with the right combination of information and abstinence. But it doesn’t really work like that.

I understand about Food Babe. I don’t like what she’s doing, and I’m worried about how many people take her seriously. The problem is Food Babe, and it isn’t. Our problem’s root is in how desperately we need to hear good news, and how little good news there seems to be sometimes, at least in headlines, if you’re not sure where to look. Our problem is in how reassuring some messages are when they reinforce our fears, and when they’re packaged in nice-looking books and pretty blogs, and how we trust things that look professional and sound good, because life is so much easier and less terrifying when someone trustworthy has all the answers.

Just know that there are no miracle cures, no super foods, and no magic juice that’s going to make you pee out all the bad stuff. Wash your produce. Don’t eat meat every day. Drink lots of water. Eat enough fruits and vegetables that it doesn’t hurt or burn when you poop. And read with an eye for the details; we’re all selling something, and whatever it is, it’s motivated by our optimism, our hope, and our fear.

Good science is not going to shout at you or jump up and down, waving its arms. It can’t, and it shouldn’t. Look for it.

Good chocolate for a better Easter

If a bunny is going to hop through your home this weekend and lay chocolate eggs in your living room (I think that’s how it works?), might I suggest you request better eggs made of better chocolate?

As busy, probably (definitely) tired people, it can be hard to find time to do a little extra, or to give a bit back. Our time is finite, and an infinite number of things will swell to fill what little we have.

For me, work and writing and wrangling Toddler and Nick are each their own full-time thing, and 24 hours is not always enough time to do all of everything I have to do. That’s why, for me, the simplest way to feel like I am making a difference in the world is to make responsible choices when I’m shopping by looking for and supporting better options for goods like chocolate, coffee, sugar, and produce, among other things.

According to World Vision Canada, “a recent Ipsos Reid poll revealed that more than half of Canadians believe they don’t consume any products made by children.” But, “there are literally dozens of household items that we buy daily that may ‘contain’ child labour.”

Fortunately, consumer demand for better products makes – and in many cases, has made – better products more widely available. Whether you’re shopping high end, or, like me, just hurriedly cramming chocolate bunnies in your basket at the drugstore while buying toilet paper (because adulthood is 80 per cent about buying more toilet paper), you have more Fair Trade, responsibly sourced options than ever.

According to World Vision, “currently about 95 per cent of chocolate sold around the world is not certified to be free from the use of forced, child or trafficked labour.” However. However! “Some of the largest chocolate manufacturers, including Mars, Ferrero and Lindt have already committed to sourcing only ethical, child-labour free chocolate by 2020.” That’s all you, by the way. And us. It’s people demanding better that’s pushing corporate interest in more ethical, more sustainable practices.

Chocolate is an easy place to start. Look for the Fair Trade logo – Camino’s on board, and some Cadbury products are too. I bought last year’s Camino bunnies at Shopper’s Drug Mart, and they were maybe a dollar more than competing, non-certified brands. Buying better consumer goods is an easy place to start; if you haven’t started, start this Easter.

I think this has been my weirdest week on record, weirder than the time I was 20 and dyed myself and my hair orange at the same time and didn’t realize it. My ears are burning, and it’s not a tanning bed this time.

(If you’re wondering how you can dye yourself with a tanning bed, you can’t really. But you can turn yourself orange with a combination of tanning beds and self tanner, and then you can’t hide your shame.)

Anyway.

It’s like real life is happening in parallel with this other life I like the idea of, this alternate reality where I get to tell people stories and convince them to love kimchi and tuna and maybe even Spam. Of course, regular life is unyielding, and so on top of the euphoria of everything I ever wanted coming to pass, I am still wiping butts and folding laundry and finding mistakes in press releases I wrote or trying to book meetings with researchers at work.

And I know I wrote the book, and I knew that it was being edited and then designed and I understood that it would be printed and then I even had copies in my hands, and it all still felt like I could, I don’t know, get out of it maybe? Like if I panicked, maybe I could, I don’t know, stop the presses? Somehow in my mind it was going to be a real book but also maybe no one would ever know about it and I could escape judgment.

I guess what I’m trying to get at is that none of it felt really, really real until this week, when people who weren’t my immediate family started getting their copies.

And then started making the recipes.

And then, well: I saw it, for real, in a bookstore I go to probably twice per week.

So, here we go. Stuff’s happening now. I’ve had an interview with Megaphone, and with the Vancouver Sun. My schedule for April is filling up.

Hardly anyone tells me they like my press releases so this is a kind of gratification I’ve never known.

Blackberry frozen kefir

I keep thinking I’d like to take up embroidery (in the style of Judi Dench), because it seems like such a normal hobby to have. And because gut bacteria is starting to seem like a weird thing to dwell on and Nick thinks that “healthy poops for the whole world” is not a hobby, but the kind of thing I should talk to a mental health professional about. I think Nick is ungrateful.

Yes. Embroidery. That seems like something I could talk to people about. Because right now, I’m talking a lot about kefir and lacto-fermentation and gut flora and getting a lot more side-eye than even I’m used to. Every day, it seems, some study out of somewhere implicates intestinal bacteria in some seemingly unconnected disease or disorder, demonstrating that the relationship between our health and what we eat is increasingly complex.

A lot of nutrition information tries to sum up healthy eating in a few easily digestible tips and tricks. (Wink.) This is, I think, where phenomena like “super foods” come from – the idea that optimal nutrition is based on a simple formula, and if you just eat a carefully selected limited number of things, you will live forever. That’s a nice idea, and I can see why people are into it. Unfortunately, there is no simple one-size-fits-all approach to nutrition. Your best shot at a healthy diet is a diet that includes a little bit of everything and nothing to excess. Which is great, because I don’t think I could live a lifestyle that excluded a reasonable amount of Taco Bell.

Our weird health kick is kefir, which I make because making yogurt involves too many steps. You just fill a jar with some kefir grains and milk, then strain off the grains and start all over again with new milk, either refrigerating the kefir for consumption or secondarily fermenting it with citrus peels for even better taste. We drink kefir because it makes our bellies feel nice and because it’s easily blended into things I can drink for breakfast, since I’m bad at wanting or remembering to eat breakfast. Some kefir and some frozen berries blended and poured into a tall glass is something I can consume in a rush while doing ten other things.

Kefir

Kefir and yogurt are both full of good bacteria, but kefir contains roughly three times the amount of probiotic cultures. Whether that matters for long term health is unclear, but in the short term, it can be helpful; this week Toddler’s had an ear infection, and the amoxicillin the doctor prescribed can be hard on little bodies. The pharmacist’s advice was to load Toddler up with probiotics, either in the form of yogurt or supplements. And so, the kefir was useful once again.

Of course, he was unlikely to take a shot of kefir … especially not when the amoxicillin was bubblegum flavoured. So we came up with this frozen yogurt/sorbet-like thing, and he declared “it’s perfect, mum!” and ate enough to keep his little gut happy.

Maybe embroidery would be more socially acceptable. But probiotic ice cream is worth telling people about. Healthy poops for the whole world, indeed!

If you make kefir, let it ferment twice. To do this, make the kefir first, then strain out the kefir grains and let the kefir continue to sit at room temperature for an additional 24 hours, either as it is or with a strip of orange or lemon peel.

You can buy kefir grains online, or at some natural health food stores. In Vancouver, you can get them at Homesteader’s Emporium. Or, if you’re lucky, you know my friend Grace and can get them for free after a lengthy conversation about your microbiome at dinner. (I’m a bit much to be around.)

Blackberry frozen kefir

  • 2 cups twice fermented kefir, store-bought plain kefir or plain 2% yogurt
  • 2 cups fresh or frozen (and defrosted) blackberries, mashed and then passed through a fine mesh sieve
  • 2/3 cup honey or cane sugar syrup
  • 1 tsp. vanilla extract

Whisk kefir, blackberries, honey, and vanilla in a bowl until thoroughly combined. Chill in the fridge for 30 minutes, then process through an ice cream machine as per the manufacturer’s instructions.

Freeze for at least one hour before serving. If freezing for more than four hours, let the dessert sit on the counter for ten minutes before serving.

Serve with an additional drizzle of honey, if desired.

Holy crap, it happened.

Much has happened since we last spoke. Spring has sprung in Vancouver, and we have been playing outside without winter coats. We finally finished all the cheese I bought in early December. I am now raising a Ninja Turtle (Donatello, specifically), and bearing the brunt of his ninja attacks which are not stealthy but do sometimes hurt.

And that book I’ve been thinking about and talking about and fretting over for months went to the printer, and then emerged fully formed this past week! I have real, hard copies here in my apartment, which I can hold and look at and worry about making sticky. I filed my reference copy between books by Nigella Lawson and Fannie Farmer, in hope that some of their magic rubs off.

These are fast-paced times.

And there is so much to talk about, recipe-wise, but we’ve hardly had a moment to catch our breath or chew thoughtfully or clean the weird smell out of the garbage disposal. I have a couple of things simmering away, so stay tuned.

One-dish baked chicken and rice.

If December was about coming undone, January is about putting ourselves back together (and lying to MyFitnessPal). We stole a whole day to ourselves yesterday, turned our ringers off and did laundry and made messes and ate Alphagetti on the couch in our pajamas and it was exactly what we needed. Today life returned to normal, and work was work and not an unending candy buffet. Everything is as it was, only now nothing really fits right and we’ve got to somehow pay all those bills we put off until after Christmas.

Part of putting ourselves back together is eating simply. After a month of rushing and driving and spending and feasting and drinking, all I want is to not feel like I am dying after eating a meal. At least for now. Simple, single-dish dinners that mostly prepare themselves are what will get us through this rainy post-holiday decompression phase (and, with any luck, back into our pre-Christmas dress sizes).

Happy New Year. I hope you’re easing into 2015, cozy, and eating something nice.

One-dish baked chicken and rice

(Makes 4 to 6 servings.)

  • 4 tbsp. olive oil, divided
  • 8 chicken thighs
  • 2 carrots, peeled and finely chopped
  • 2 celery stalks, finely chopped
  • 1 onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 3 tsp. fresh thyme, chopped and divided
  • 2 cups basmati or other long-grain white rice
  • 2 1/2 tsp. coarse salt, divided
  • 1 1/2 tsp. ground black pepper
  • 1 lemon, zest and juice
  • 4 cups low-sodium or homemade chicken stock

Preheat your oven to 375°F. If you have a large pan or Dutch oven, use this. If not, a deep 9″x13″ pan will work just fine.

Rub chicken thighs with oil, and season with 1 teaspoon each of salt and pepper. Set aside.

Over medium-high heat, sauté your carrots, celery, and onion in olive oil for two to three minutes, until the veggies just begin to soften and their colours turn bright.

Add the garlic and 2 teaspoons of thyme, cook another minute, then add the rice. Stir to coat the rice in the oil mixture. Add remaining salt and pepper. Stir again.

Add lemon zest and juice and stock to the pan. Taste, and adjust your seasonings as needed.

Nestle the chicken thighs into the rice mixture, sprinkle with remaining thyme, and bake, uncovered, for  50 to 60 minutes, until chicken is cooked to a minimum internal temperature of 165°F, or until you find the juices run clear when you cut into a piece of chicken with a sharp knife.

Let rest for ten minutes before serving.

This was one of those weeks that really makes one appreciate the simple things; the kind of week where at the end of it, my salvation came from the basics – eggs and butter and sugar and flour, a bit of pasta, a bag of onions, and a few frozen sausages. The week started with some debit card fraud that cost me most of what was in my bank account, and an unavoidable trip to the local mechanic that threatened to eat up the rest.

It is also December, as you might have noticed – on top of everything, I’ve got places to go and potlucks to participate in and when you’ve got a cookbook pending, it is poor form to show up at these things with a two-liter bottle of store-brand pop and a bag of Cool Ranch Doritos. If you’re not going to bother washing your hair or dressing like an adult, you should at least show up with a salad, I guess.

But I haven’t been to a grocery store all week, which is silly because there’s one half a block away and I’ve managed to hit up the liquor store in the same vicinity twice. I am a caricature of a woman unraveling. Imagine a lot of leggings and cat hair.

December is reason enough to unravel and as a good a time as any. ‘Tis the season for demands on top of demands and far more debits than credits. And it’s so easy to fall into an exasperated funk and find yourself yelling at everyone; this is not what the season is all about, I’m told. I know it’s hard advice to take sometimes, but we need to go easy on ourselves. Take breaks. Take shortcuts. Make pound cake.

Pound cake will solve a great many of your December problems. It’s cheap – at its most basic it is literally just butter, sugar, flour and eggs – and it benefits from sitting around a while, so it’s best to make it a day ahead. It’s cake, so people will think that you tried. It’s cake, so everyone will like it.

This is grandma-level stuff right here, the kind of thing that will stand the test of time. A glazed pound cake recipe in your back pocket will get you through all kinds of things, and up to 98 per cent of what December can throw at you.

This is not one of those Bundt-pan pound cakes; make this in a loaf pan. Make it the night before you want to serve it, and then plop it out onto a plate or into a container and take it wherever you need to go. This is not fancy. Let someone else handle fancy – your job is to get through the holidays, deliciously.

Coconut caramel pound cake

Cake:

  • 1 cup butter, at room temperature
  • 1 cup brown sugar, packed
  • 4 eggs
  • 1 cup all-purpose flour
  • 1/2 tsp. coarse salt
  • 1/2 tsp. vanilla extract

Sauce:

  • 1 14-oz. (398 mL) can coconut milk
  • 1/2 cup brown sugar
  • 1/2 tsp. vanilla extract
  • Pinch salt

Preheat your oven to 350°F. Grease a 9″x5″ loaf pan, then line it with parchment paper so that the paper peeks over the sides by a couple of inches.

Using either a stand mixer or an electric mixer, cream butter and sugar together until fluffy and pale. Pause occasionally to scrape down the sides of the bowl.

Add the eggs one at a time while continuing to beat the mixture. Once you’ve added your last egg, add the vanilla and salt, and continue to beat until thoroughly mixed.

Using a spatula, fold the flour into the butter-sugar-egg mixture, a third of a cup at a time until just moistened. Pour the batter into your loaf pan, and bake for 40 to 50 minutes, until a toothpick inserted in the centre comes out clean.

Meanwhile, simmer coconut milk over medium heat with brown sugar until the mixture reduces by half. Add the vanilla and the salt, and set aside.

Using a toothpick, poke many holes into the top of the still-hot cake. Pour the coconut milk mixture over top, and let sit until cool. Cover, and let rest at room temperature for at least eight (up to 24) hours before serving.

To serve, reheat in a 350°F oven for 10 minutes. Invert onto a plate, peel away the parchment, and cut into slices. Serve as is, or with a scoop of vanilla ice cream.

Last week, or maybe the week before, it rained and rained and rained one night (I can’t remember which night because that sort of thing happens a lot here), and it was dark out and nearly bedtime, and I had a lot to do, book-wise, and I was dead tired after work and we all could have just endured a few more episodes of Octonauts, but there were big puddles outside. In Vancouver, if you don’t look at a puddle as an opportunity, the time between summers can be pretty bleak. So I had Nick shove Toddler’s feet into his boots and button his raincoat while I shoved my own feet into my own boots, and we clomped outside to splash around in the water under the orange glow of our street lamps. We rounded the block twice, and on the second go-round, Toddler announced that he’d like hot chocolate, “with march-mellos.” Who am I to refuse such a request? I can never say no to a marshmallow.

So we splashed our way to the grocery store just down the street, and we marched to the back of the store where the marshmallows are kept beside the ice cream freezers and sundae toppings, bought a big bag of white mini marshmallows, then came home to make hot chocolate. By the time Toddler was in his jammies, I had his hot chocolate in his dinosaur mug, heaping with marshmallows. We drank our drinks and read some books and we all went to bed pretty pleased with ourselves and our sound decision-making.

Fast forward a few days or weeks, and I still have a huge bag of mini marshmallows. And Nick, with his diabetes, has gone off to the woods outside of Princeton to shoot our year’s supply of meat. So Toddler and I are alone, free to raise our blood sugar and rot our teeth unencumbered. I’m using up the marshmallows. Toddler’s pretty pumped.

This is a spin on a bake-sale classic, improved by substituting white chocolate chips for butterscotch chips. The result is kind of like tiger butter, only with marshmallows. I used the microwave for this because it somehow felt wrong not to. Toddler and I are going to spend our weekend together eating these in a blanket fort while watching the whale shark episode of Octonauts over and over and over until the sugar knocks us out. You should definitely lick the spoon.

Peanut butter marshmallow bars

  • 1/2 cup butter, cut into about eight equal pieces
  • 12 oz. white chocolate chips
  • 1 cup smooth peanut butter
  • 1/2 tsp. salt
  • 1/2 tsp. vanilla extract
  • 3 cups white mini marshmallows

Put the butter and the chocolate chips in a large glass bowl. Microwave the whole thing for 30 seconds. Remove the bowl from the microwave, stirring the mixture well, then return it to the microwave and repeat this process.

Add the peanut butter, stirring well. Microwave for another 30 seconds, before removing the bowl stirring well, and repeating the process once more.

When the chocolate chips have melted and the mixture is smooth and creamy, add the salt and vanilla, stir again, then set the bowl aside and let it rest for a minute.

Lightly grease a 9″x9″ baking dish and line it with parchment paper.

Stir the marshmallows into the peanut butter mixture, and then pour the whole thing into your prepared pan. Refrigerate the mixture until it’s firm enough to slice, at least two hours.

Cut into small squares and serve. This is great for bake-sales, treat tables at holiday events, and on plastic Buzz Lightyear plates under a fort made of blankets.

“You need my help,” he shouts, sans pants and full of fury as his purple marker is out of ink and he needs a “very big whale” drawn right now, please. Where any of this comes from, I hardly know. As Toddler’s language develops, his phrases are increasingly amusing – he’s an accidental and illiterate riddler. “You need my help,” he says, because he mixes up his subjects and his objects, and because he will not stand to be corrected, not by me, because what do I know.

Despite the fact that I’m now very near my manuscript deadline (October 1! It looms!), Toddler continues to insist that he be the centre of attention at all times. He is two, nearly three, and frankly doesn’t give a shit about my timelines. YOU NEED MY HELP. So, despite the pile of work I still have to do, I’m still spending an inordinate amount of time pushing Thomas and his railway friends off “bumpy” bridges to their deaths, and reading books about “very scary” animals (and mimicking their sounds, because of course I know what sound a sloth makes?), and drawing whales and rainbows and whole families of monsters (this way, not that way, not blue, not green).

If this is having it all, then out of necessity I am doing it on very little sleep. I think that is the secret to having it all: you just have it all all the time, with no breaks.

I’ve never been much of a sleeper anyway, but I have heard about rest and think I might like to try it someday. I wonder what I could achieve if I had a full night’s sleep? Maybe I’d remember to turn on the dishwasher before the smell of old food and dirty dishes takes over the apartment; maybe I’d stop buying so many cans of red kidney beans – I needed one can to test a recipe one last time and somehow, over the course of a week, I ended up with five. I hope I remember to use them.

But still, we’re getting there, if “there” is a finished book and a happy toddler and dinner on the table eventually; I’m still going to work every day, and functioning as an adult most of the time. We have not yet run out of toilet paper. I did finally remember to pay the hydro bill.

Most of my work gets done after dark, and so I approach bedtime with eyes stinging from the glare of a back-lit screen. Sleep experts advise that this is not a great way to ease into bedtime, but sleep experts are probably not much fun. You are supposed to avoid screens for at least an hour before bedtime, I’ve read, or else the light tricks your brain into believing it is daytime. I like to think my brain is smarter than that; in truth, it’s probably much dumber, because it’s never not tired and if it was really clever, it would knock me out from time to time to catch itself up on some rest. YOU NEED MY HELP, Brain.

So, to sort of limp towards unconsciousness, I’ve devised a beverage that calms me down the way my morning latte picks me up. Tea lattes have become bookends to my day, and it’s kind of nice. It’s soothing, and sweet, and if you drink it in bed while you read a few pages of whatever David Sedaris book you have on your bedside table, you’ll drift happily off to sleep, with little to no fretting about all the things you still have to do before dawn.

Chamomile latte

  • 1 mug full of milk
  • 1/2 tsp. honey
  • 1 chamomile tea bag

Measure a full mug of milk, then dump it into a small sauce pan. Add the honey, and whisk to mix the honey into the milk. Add the teabag.

Gently warm the milk to the point where it just begins to bubble, somewhere between 170°F and 180°F. When it reaches this point, remove the pot from the heat and set your timer for five minutes.

After five minutes, pour the milk back into your mug, discard the teabag, and go to bed.
